It’s Bobby Button who gets credit for this idea. Bobby was a very original client with considerably high standards. Every time he came to the restaurant, his habit was to order a special breakfast: the Bonjour, which consisted of a crepe with bacon (Bobby replaced the bacon with ham) served with cheddar, camembert, or even brie, depending on what he felt like that day…

One morning, Cora’s daughter burst into the kitchen looking worried. Bobby had just asked for something that wasn’t on the menu: he ordered an omelette with bacon and tomatoes… “Ah, that’s a cinch!” answered Cora. But Julia added that the omelette had to be served between two white-flour crepes… The bold request was an instant hit with Cora who thanked her lucky star she was able to serve this extraordinary customer. This superb idea was surely going to be a success.

Cora prepared the succulent omelette and hid it between two large crepes. She then had to cut the colossal sandwich into four pieces to fit it onto the oblong plate she usually used to serve her crepes. The Bobby Button was born and added to Cora’s repertoire.
