Je voulais aller serrer la pince \u00e0 quelques-uns de nos franchis\u00e9s de la r\u00e9gion. Ensuite, je d\u00e9sirais visiter l\u2019\u00e9picerie \u00ab\u00a0WHOLE\u00a0FOODS\u00a0\u00bb de la rue\u00a0Bank, le c\u00e9l\u00e8bre Moulin\u00a0de\u00a0Provence et tout le March\u00e9\u00a0By. Le clou de la journ\u00e9e allait \u00eatre un souper dans un restaurant chinois connu mondialement \u00e0 cause de ses d\u00e9licieux \u00ab\u00a0egg rolls\u00a0\u00bb.<\/p>\n<p>Je fais ce genre de voyage \u00e0 l\u2019occasion d\u2019abord pour visiter nos restaurants \u00e9tablis un peu partout au Canada. J\u2019en profite pour rencontrer nos franchis\u00e9s et me familiariser avec nos supers employ\u00e9s corporatifs. Ils sont ma t\u00eate et mes yeux dans les restos et semblent toujours heureux de me rencontrer. Nous lunchons ou soupons ensemble bien souvent lorsque l\u2019horaire le permet. Je suis extr\u00eamement reconnaissante envers tous ces gens qui veillent au grain, qui aident et appuient nos valeureux franchis\u00e9s. Lorsque je fermerai mes yeux pour toujours, je voudrais que l\u2019on r\u00e9pande mes id\u00e9es au pied d\u2019un immense pommier. Ma d\u00e9pouille entortill\u00e9e dans les racines de l\u2019arbre, j\u2019imaginerai chaque jour des milliers de p\u00e9pins de pomme qui feront appara\u00eetre des vergers. C\u2019est ainsi que j\u2019aime me repr\u00e9senter mon r\u00e9seau de franchis\u00e9s.<\/p>\n<p>Comme je ne vais pas mourir de sit\u00f4t, revenons \u00e0 nos moutons! Sur l\u2019autoroute\u00a050 vers Ottawa, je constate qu\u2019un ange bienveillant vient tout juste de balayer l\u2019hiver pendant que nous discutions cuisine et mangeaille. L\u2019ami \u00c9ric, originaire de Suisse, a immigr\u00e9 au Canada il y a plus de 30\u00a0ans. Il a \u00e9tudi\u00e9 la grande sagesse culinaire dans son pays et travaill\u00e9 dans les plus grands palaces de Gen\u00e8ve et de Lausanne. Grand voyageur, il parcourt le monde \u00e0 la recherche de nouvelles saveurs. Son palais est un proche cousin de celui du grand Bocuse. L\u2019amiti\u00e9 qui nous lie go\u00fbte immens\u00e9ment bon! Nous cuisinons ensemble tr\u00e8s souvent et exp\u00e9rimentons de nouvelles fa\u00e7ons de faire pour surprendre nos amis.<\/p>\n<p>Une fois arriv\u00e9s pr\u00e8s du centre-ville d\u2019Ottawa, nous nous rendons sur la rue Bank o\u00f9 se trouve l\u2019extraordinaire march\u00e9 \u00ab\u00a0Whole\u00a0Foods\u00a0\u00bb que j\u2019ai d\u00e9couvert au cours de mes vir\u00e9es am\u00e9ricaines. Il s\u2019agit d\u2019une cha\u00eene \u00e9coresponsable avec, entre autres, des produits frais, biologiques, naturels et \u00e9cologiques. Je me r\u00e9gale \u00e0 pas de tortue en ratissant tout simplement les all\u00e9es. \u00c0 chaque visite, je d\u00e9couvre une tonne d\u2019excellents produits : nourriture, p\u00e2tisseries, c\u00e9r\u00e9ales inusit\u00e9es, fruits exotiques, cosm\u00e9tiques, savons et poissons de toutes sortes. Je raffole aussi des plats \u00e0 emporter. Comme nous venons de d\u00e9jeuner \u00e0 notre restaurant CORA de Kanata, je deviens raisonnable et n\u2019ach\u00e8te que du saumon s\u00e9ch\u00e9 pour rapporter \u00e0 la maison.<\/p>\n<p>Passionn\u00e9 de cr\u00e8mes magiques pour sa peau, \u00c9ric passe une grosse demi-heure dans l\u2019all\u00e9e des miracles en petits pots. Oui, oui! J\u2019exag\u00e8re \u00e0 peine! L\u2019homme vient de f\u00eater ses 70\u00a0ans, mais en fait \u00e0 peine 50. Il ne mange que de la bonne nourriture, des produits bios de pr\u00e9f\u00e9rence. Il aime \u00e9norm\u00e9ment la viande qu\u2019il cuisine avec dext\u00e9rit\u00e9 et il excelle dans les sauces.<\/p>\n<p>Je suis peut-\u00eatre une sp\u00e9cialiste des bons plats matinaux, mais je n\u2019ai aucun talent pour la viande, moi qui en mange si peu. Comme dit mon entourage, je suis une Gasp\u00e9sienne qui mange de la morue d\u2019Islande. La meilleure au monde, selon mon ami \u00c9ric!<\/p>\n<p>Le temps file \u00e0 100\u00a0\u00e0 l\u2019heure lorsqu\u2019on veut tout voir, et plus sp\u00e9cialement notre restaurant CORA de la rue Rideau. Je pensais me souvenir de l\u2019adresse exacte, mais ma m\u00e9moire est aussi vieille que l\u2019ancienne mairesse de Mississauga, Hazel\u00a0McCallion, qui a r\u00e9gn\u00e9 pendant 36\u00a0ans. Je l\u2019ai d\u2019ailleurs rencontr\u00e9e lorsque nous avons inaugur\u00e9 notre premier restaurant en Ontario, puis chez elle, quelques semaines plus tard, pour prendre le th\u00e9. Cette femme extraordinaire est d\u00e9c\u00e9d\u00e9e deux semaines \u00e0 peine avant de f\u00eater ses 102\u00a0ans, en 2023. Elle \u00e9tait un mod\u00e8le d\u2019efficacit\u00e9 pour moi, et j\u2019esp\u00e8re l\u2019imiter en mati\u00e8re de long\u00e9vit\u00e9.<\/p>\n<p>Quelques bouff\u00e9es d\u2019air et nous entrons dans l\u2019immense CORA tout de bleu v\u00eatu et d\u00e9cor\u00e9 d\u2019une vingtaine de cadres significatifs en guise de clin d'\u0153il \u00e0 l'\u00e9volution de notre marque \u00e0 travers le temps. Dans cet endroit bellement habit\u00e9, j\u2019ai l\u2019honneur de serrer la pince \u00e0 mon franchis\u00e9. Nous prenons quelques photos pour immortaliser l\u2019instant et, comme toujours, plusieurs clients s\u2019approchent pour une photo avec \u00ab\u00a0la\u00a0\u00bb madame Cora. Mon c\u0153ur, telle une v\u00e9ritable reine, aime tous ses sujets. Je n\u2019ai peut-\u00eatre pas de r\u00e9el amoureux, mais ma vie d\u00e9borde d\u2019amour. J\u2019ai des amis extraordinaires, des coll\u00e8gues g\u00e9niaux, des franchis\u00e9s bien intentionn\u00e9s et des clients qui me choisissent depuis toujours.<\/p>\n<p>Tourne \u00e0 droite, tourne \u00e0 gauche, nous cherchons la devanture du March\u00e9\u00a0By et son c\u00e9l\u00e8bre Moulin\u00a0de Provence. Lors de sa visite officielle au Canada, le 19\u00a0f\u00e9vrier 2009, Barack\u00a0Obama est entr\u00e9 dans le Moulin\u00a0de Provence pour acheter des biscuits pour ses deux filles et sa femme. Il a choisi des biscuits rouge et blanc sur lesquels \u00e9tait inscrit \u00ab\u00a0Canada\u00a0\u00bb. Depuis cette c\u00e9l\u00e8bre visite, l\u2019engouement pour ces biscuits surnomm\u00e9s \u00ab\u00a0Obama Cookies\u00a0\u00bb s\u2019av\u00e9ra absolument incroyable. Le Moulin\u00a0de Provence vendit pendant longtemps tellement de biscuits que le propri\u00e9taire du commerce voulut remercier le Pr\u00e9sident en versant 10\u00a0000\u00a0$ dollars \u00e0 la Fondation Obama.<\/p>\n<p>Nous nous promenons dans le march\u00e9 et je m\u2019empresse de programmer sur mon t\u00e9l\u00e9phone le trajet vers le GOLDEN\u00a0PALACE. Jadis trop occup\u00e9e \u00e0 ouvrir des restaurants, j\u2019y suis all\u00e9e une seule fois, il y a environ dix ans et j\u2019ai toujours voulu y retourner. La vie passe tellement vite! Puis une pand\u00e9mie nous a immobilis\u00e9s et j\u2019ai oubli\u00e9 mes bonnes adresses de jadis.<\/p>\n<p>Mon ami me fait plaisir en acceptant de nous conduire au vieux restaurant chinois. Il ne s\u2019agit pas du tout de son genre de nourriture et j\u2019ai cru qu\u2019il craindrait m\u00eame d\u2019entrer lorsqu\u2019il verrait que la b\u00e2tisse est aussi vieille que l\u2019arche de No\u00e9. Oui, oui! Le Golden Palace a c\u00e9l\u00e9br\u00e9 son 63<sup>th<\/sup>\u00a0anniversaire en 2023 et je mettrais ma main au feu qu\u2019aucune r\u00e9novation n\u2019a \u00e9t\u00e9 faite pour rajeunir l\u2019endroit. Tout est v\u00e9tuste, d\u00e9t\u00e9rior\u00e9 par le temps et l\u2019usure. S\u2019y trouvent deux chandeliers branlants et, dans un coin, comme \u00e9l\u00e9ment de d\u00e9coration, un chat ou peut-\u00eatre un tigre g\u00e9ant.<\/p>\n<p>Tous les serveurs se dirigent assur\u00e9ment vers les cent ans, mais ils sont immens\u00e9ment polis, gentils et souriants. Je suis presque certaine qu\u2019ils viennent tous de la m\u00eame lign\u00e9e. Ils nous pr\u00e9sentent un menu aussi vieux qu\u2019eux-m\u00eames avec un sourire fendu jusqu\u2019aux oreilles.<\/p>\n<p>Je sugg\u00e8re \u00e0 mon ami de commander le d\u00eener num\u00e9ro\u00a02, pour deux. Le tout comprend deux soupes wonton, un \u00ab\u00a0egg roll\u00a0\u00bb chacun, une assiette de chow mein au poulet, des c\u00f4tes lev\u00e9es \u00e0 saveur BBQ, une assiette de riz frit au poulet et deux biscuits aux amandes. Lorsqu\u2019\u00c9ric croque une bouch\u00e9e de son \u00ab\u00a0egg\u00a0roll\u00a0\u00bb, il tombe en p\u00e2moison. Il n\u2019a jamais go\u00fbt\u00e9 quelque chose d\u2019aussi bon! Nous avalons avec app\u00e9tit, car tout est d\u00e9licieux.<\/p>\n<p>Je n\u2019avais pas racont\u00e9 \u00e0 mon ami que je connaissais d\u00e9j\u00e0 le Golden\u00a0Palace. Comme il aime les \u00ab\u00a0egg rolls\u00a0\u00bb et qu\u2019il n\u2019en trouve jamais d\u2019assez bons, j\u2019ai voulu le surprendre et lui faire conna\u00eetre l\u2019or en barre que repr\u00e9sente le \u00ab\u00a0egg roll\u00a0\u00bb\u00a0pour le Golden\u00a0Palace. Ces petits d\u00e9lices sont livr\u00e9s en format de deux douzaines presque partout dans le monde, par livraison prioritaire le lendemain.<\/p>\n<p>\u00c9videmment, nous avons quitt\u00e9 l\u2019endroit avec chacun une douzaine de d\u00e9licieux \u00ab\u00a0egg rolls\u00a0\u00bb. Avant notre vir\u00e9e \u00e0 Ottawa, j\u2019\u00e9tais all\u00e9e au Golden Palace juste une fois, mais quelques superviseurs de notre r\u00e9seau avaient toujours la gentillesse de me rapporter une douzaine de ces merveilles lorsqu\u2019ils venaient \u00e0 notre si\u00e8ge social. I wanted to stop by and say hello to a few of our franchisees in the area and then visit Whole Foods Market on Bank Street, the Moulin de Provence and ByWard Market. The highlight of the day was going to be dinner at a world-renowned Chinese restaurant, famous for its delicious egg rolls.\r\n\r\nI enjoy doing this kind of trip from time to time to visit our restaurants all over Canada. I take the opportunity to meet with our franchisees and get acquainted with our talented training staff. They are my head and eyes in the restaurants, and they always seem happy to see me. We have lunch or dinner together when our schedules allow. I\u2019m extremely grateful to all of them who keep a close watch on everything and support our dedicated franchisees. When I close my eyes for the last time, I\u2019d like my ideas to be spread at the foot of a huge apple tree. Every day, with my remains entwined with the roots, I\u2019ll imagine a thousand apple seeds that will one day grow into orchards. That\u2019s how I picture my franchise network.\r\n\r\nSince I won\u2019t die any time soon, let\u2019s get back to my road trip! On Highway\u00a050 to Ottawa, I noticed that a caring angel was sweeping away the final remnants of winter while we discussed cooking and food. My friend \u00c9ric, originally from Switzerland, immigrated to Canada more than 30\u00a0years ago. He studied the great culinary wisdom in his country and worked in the great palaces of Geneva and Lausanne. A seasoned traveller, he scours the world in search of new flavours. His palate is a close cousin to the great Bocuse\u2019s palate. The friendship that ties us together tastes incredibly delicious! We frequently cook together, and we experiment new ways to reinvent recipes and surprise our friends.\r\n\r\nOnce in downtown Ottawa, we made our way to Bank Street to the extraordinary Whole\u00a0Foods Market, which I discovered during one of my road trips to the United States. The environmentally responsible supermarket offers fresh, organic, natural and ecological products. I feast my eyes as I stroll the aisles at a snail\u2019s pace. I discover lots of excellent products each time I visit: food, pastries, unusual cereals, exotic fruit, cosmetics, soaps and fish of all kinds. I\u2019m also crazy about their take-out dishes. Since we had just enjoyed breakfast at our CORA restaurant in Kanata, I\u2019m reasonable and only buy smoked salmon to bring home.\r\n\r\n\u00c9ric has a passion for magic facial creams and spends over a half hour in the section stocked with these miracles in a jar. I\u2019m hardly exaggerating! The man just celebrated his 70<sup>th<\/sup> birthday, but he looks like he\u2019s 50. He only eats quality, and if possible, organic food. He\u2019s a big lover of meat, which he skilfully cooks, and he\u2019s an excellent saucier.\r\n\r\nI may be an expert in delicious morning dishes, but I have no talent with meat, probably because I eat so little of it. Like my family says, I\u2019m a woman who was raised on Gasp\u00e9sie fish, who now eats cod from Iceland. It\u2019s the best cod in the world, according to my friend \u00c9ric.\r\n\r\nTime flies when there are so many things to see and we still have to visit our CORA restaurant on Rideau Street. I thought I remembered the address, but my memory is as old as Mississauga\u2019s former mayor, Hazel\u00a0McCallion, who reigned for 36\u00a0years. I had the chance to meet her when we inaugurated our first restaurant in Ontario, and then a few weeks later at her house, when she invited me for tea. This extraordinary woman passed away just two weeks short of turning 102, in 2023. She was a model of efficiency, and I hope to match her longevity too.\r\n\r\nWe take a few breaths of fresh air as we stroll towards the huge blue-coloured CORA with its walls covered in pictures presenting a visual history of our brand. In this inviting setting, I have the honour of shaking hands with my franchisee. We take a few pictures to capture the moment and, as is often the case, a few customers approach me and ask for a photo with \u201cMadame Cora.\u201d My heart, like a true queen, loves all its subjects. I might not know romantic love, but my life overflows with love. I have extraordinary friends, brilliant colleagues, well-intentioned franchisees and patrons who have always chosen me.\r\n\r\nA turn to the right, a turn to the left. We\u2019re looking for the ByWard Market and its famous Moulin\u00a0de Provence. When Barack\u00a0Obama was on his official visit to Canada on February 19, 2009, he went into the Moulin\u00a0de Provence to buy cookies for his two daughters and wife. He picked the red and white cookies with the name \u201cCanada\u201d written on them. After his famous visit, people went crazy for these \u201cObama cookies.\u201d The Moulin\u00a0de Provence sold so many that the shop\u2019s owner thanked the President by donating $10,000 to the Obama Foundation.\r\n\r\nWe enter the market and I quickly plug in the next stop on my phone: the GOLDEN PALACE. I\u2019ve only been once, some 10 years ago, and I\u2019ve wanted to go back ever since but was always too busy opening the next restaurant. Life goes by so fast! Then the pandemic shut us away and I forgot about my old favourite addresses.\r\n\r\nMy friend kindly indulges me and agrees to drive us to the old Chinese restaurant. It\u2019s not the type of food he enjoys, and when he sees the building that looks as old as Noah\u2019s Ark, he seems reluctant to set foot inside. The Golden Palace celebrated its 63<sup>rd<\/sup> anniversary in 2023, and I\u2019d swear it\u2019s never been renovated. Everything is dilapidated, worn by time and wear. There are two wobbly chandeliers and, in a corner, a decorative cat or perhaps a giant tiger.\r\n\r\nAll the waiters look like they\u2019ll soon celebrate their centenary birthday, but they are exceptionally polite, welcoming and warm. I\u2019m almost certain they\u2019re all related. Smiling broadly, they present us with menus as old as they are.\r\n\r\nI suggest that we order dinner No. 2, for two. It includes two wonton soups, an egg roll each, a chicken chow mein dish, BBQ spareribs, chicken fried rice and two almond cookies. When \u00c9ric bites into his egg roll, he swoons. He\u2019s never tasted anything so good! Every dish is delicious, and we quickly make short work of our meal.\r\n\r\nI hadn\u2019t told my friend that I was already familiar with the Golden Palace. Since he likes egg rolls but never finds any that satisfy his demanding palate, I wanted to surprise him and introduce him to the rolls that have made the Golden Palace world-famous. They are so popular, they are delivered in two-dozen boxes all over the world by overnight express.\r\n\r\nOf course we leave the restaurant with a dozen delicious egg rolls each. I\u2019d only been to the Golden Palace once prior to this trip, but a few thoughtful staff members from our Ottawa franchise network would bring me back a dozen of these deep-fried wonders when they visited the head office.
