Je me souviens particuli\u00e8rement des week-ends, de la congestion infernale des automobiles essayant de se trouver une place dans le trop petit stationnement d\u2019alors. \u00c9poustoufl\u00e9es par ce qu\u2019elles avaient entendu dire ou hypnotis\u00e9es par certaines descriptions de plats, les familles aussit\u00f4t sorties de l\u2019auto couraient se faufiler dans le cordon de clients encerclant le vieil \u00e9difice o\u00f9 nous occupions le rez-de-chauss\u00e9e. Du fond de ma cuisine, mes yeux devaient traverser le charivari des 29\u00a0places assises pour atteindre la fen\u00eatre en baie du devant d\u2019o\u00f9 me venait la clameur d\u2019une foule avide d\u2019entrer.<\/p>\n<p>Pour rire, quelques fois, je chuchotais aux enfants que nous \u00e9tions peut-\u00eatre comme des attractions de f\u00eate foraine dont on exhibait les quatre bras, les six doigts par main ou la chevelure jusqu\u2019aux pieds. Le plus jeune se f\u00e2chait chaque fois contre ma stupide imagination et, bien entendu, contre le fait qu\u2019ils \u00e9taient les seuls ados oblig\u00e9s par leur m\u00e8re de travailler toutes les fins de semaine de leur vie. Bien s\u00fbr, la foule ne se d\u00e9pla\u00e7ait pas pour nous, mais bien pour ce que nous mettions dans nos assiettes. Ils voulaient tous v\u00e9rifier si ce qu\u2019on leur avait racont\u00e9 s'av\u00e9rait vraiment aussi extraordinaire que cela.<\/p>\n<p>Avec le temps, et toujours confront\u00e9s \u00e0 l\u2019incessant besoin de nouveaut\u00e9 pour \u00e9blouir notre client\u00e8le, nous avons form\u00e9 un petit groupe de \u00ab\u00a0fous de la bouffe\u00a0\u00bb qui se r\u00e9unissait ponctuellement pour brasser des id\u00e9es, proposer n\u2019importe quoi sans aucune g\u00eane, et aussi, ce que j\u2019aimais le plus, raviver des souvenirs d\u2019enfance qui, malgr\u00e9 le temps, titillaient encore et toujours la langue. C\u2019est ainsi qu\u2019un matin, la belle grande Annie, athl\u00e9tique et vigoureuse, d\u00e9terra pour nous l\u2019histoire du fameux \u00ab\u00a0grilled-cheese\u00a0\u00bb que sa m\u00e8re lui servait, toute petite, avec un bol de cr\u00e8me aux tomates Campbell. Il s'agissait de son repas pr\u00e9f\u00e9r\u00e9, nous avoua-t-elle, avec un tr\u00e9molo dans la voix.<\/p>\n<p>J\u2019ai voulu en savoir plus, mais Annie s\u2019\u00e9tait referm\u00e9e. On s\u2019est donc concentr\u00e9 sur la possibilit\u00e9 d\u2019un \u00ab\u00a0grilled-cheese\u00a0\u00bb capable d\u2019arr\u00eater la pluie de tomber. Pendant quelques semaines, nous avons test\u00e9 mille et une fa\u00e7ons d\u2019anoblir le sandwich grill\u00e9 pour le transformer en un d\u00e9licieux repas rempli de bonnes choses. Un plat \u00e0 d\u00e9guster en toute simplicit\u00e9, accompagn\u00e9 de fruits frais joliment coup\u00e9s ou de pommes de terre r\u00f4ties sur la plaque. Un plat qui, reproduit \u00e0 la maison, pourrait quadrupler l\u2019\u00e9merveillement des v\u00f4tres autour de la table. Pour moi, fillette nourrie cinq jours sur sept de morue bouillie, grill\u00e9e dans la po\u00eale, en croquettes, sal\u00e9e ou napp\u00e9e de sauce blanche, le \u00ab\u00a0grilled-cheese\u00a0\u00bb d\u2019Annie m\u2019avait tir\u00e9 les larmes du c\u0153ur. Lorsque l\u2019\u00e9quipe me pr\u00e9senta leurs meilleurs essais, ma pr\u00e9f\u00e9rence s\u2019est l\u00e9g\u00e8rement tourn\u00e9e vers celui qu\u2019on nommerait le \u00ab\u00a0CROQUE-THON\u00a0\u00bb.<\/p>\n<p>Imaginez un sandwich, gr\u00e9sillant gaiement sur une plaque chauffante ou dans une po\u00eale. Voyez son ventre tout bien rempli d\u2019une g\u00e9n\u00e9reuse portion de thon en conserve habilement m\u00e9lang\u00e9 avec des \u00e9chalotes \u00e9minc\u00e9es et juste un peu de mayonnaise. Ajoutez-y deux belles tranches de fromage jaune, chacune coll\u00e9e au pain et emp\u00eachant le poisson de glisser hors de sa cachette. Imaginez la premi\u00e8re bouch\u00e9e lib\u00e9rant une explosion de saveurs et la chair de thon entrem\u00eal\u00e9e de fromage chaud et go\u00fbteux d\u00e9goulinant sur vos doigts. Ressentez l\u2019excitation de vos papilles, le bruissement de votre m\u00e9moire se rappelant l\u2019irr\u00e9sistible attrait du fruit d\u00e9fendu.<\/p>\n<p>Bien s\u00fbr, \u00e0 la maison, vous pouvez choisir le pain de votre choix et l\u2019ADN de votre fromage. Vos marmots raffoleront du simple sandwich au fromage grill\u00e9, surtout avec une bonne cr\u00e8me de l\u00e9gumes ou m\u00eame une soupe poulet et riz du march\u00e9. Mais, assur\u00e9ment, avec un brin de cr\u00e9ativit\u00e9, une source de chaleur et quelques pinc\u00e9es d\u2019amour, vous arriverez \u00e0 transformer ces deux aliments de base que sont le pain et le fromage en un v\u00e9ritable chef-d\u2019\u0153uvre culinaire.<\/p>\n<p>Vous aussi, vous pouvez m\u00e9tamorphoser l\u2019ordinaire \u00ab\u00a0grilled-cheese\u00a0\u00bb en un repas \u00e9blouissant pour vos proches. The weekends were especially memorable: the infernal congestion of cars looking for a spot in the tiny parking lot. Families, amazed by what they had heard or mesmerized by descriptions of certain dishes, ran to join the lineup of customers that encircled the building where we occupied the first floor. At the back of the kitchen, my eyes skimmed over the hubbub of the 29-seat space to the bay window at the front, where I could hear the excited clamour of the crowd eager to enter.\r\n\r\nFor a laugh, I\u2019d sometimes whisper to the kids that we were like some creatures on show at an amusement park with six fingers on each hand and hair down to our feet. My youngest would always get annoyed at my dumb imagination, and of course, because they were the only teens whose mom made them work every weekend of their lives. Thank goodness, the crowd wasn\u2019t there to gawk at us, but rather to marvel at what was on their plates. They came to see for themselves if it really was as extraordinary as the rumours.\r\n\r\nAs time passed, the need to offer new items to delight our customers became an ongoing challenge, so we put together a small group of people who were \u201cnuts about food.\u201d We would get together once in a while to whip up some ideas. Nothing was off the table, as long as the new dishes rekindled some childhood memory that still lingered on our tongues. And that\u2019s how, one morning, the beautiful, tall Annie, athletic and lively, arrived to tell us about the story of the famous grilled cheese her mom used to make her when she was little, accompanied by a bowl of Campbell\u2019s tomato cream soup. It was her favourite meal, she declared, her voice trembling slightly.\r\n\r\nI wanted to know more, but Annie remained mum. We focused on the idea of a grilled cheese that would be so delicious, it would make the rain stop. For the next few weeks, we tested a thousand and one ways to glorify this grilled sandwich and turn it into an amazing meal full of goodness. A simple dish to enjoy as is, accompanied by attractively cut fruit or potatoes crisped on the griddle. A dish that, when made at home, would increase the astonishment at the table fourfold. As a young girl who ate codfish five days a week, served up boiled, pan-roasted, in nuggets, salted or topped with white sauce, Annie\u2019s grilled cheese made my heart cry. Among the best attempts the team presented, I leaned towards the version that we would eventually christen the \u201cTUNA MELT.\u201d\r\n\r\nImagine a sandwich sizzling happily away on a hot griddle or in a pan, its belly stuffed with a generous helping of canned tuna perfectly mixed with sliced green onions and just a touch of mayonnaise. Add two beautiful slices of yellow cheese, each one hugging the bread and preventing the fish from slipping from its hideaway. Imagine the first mouthful releasing an explosion of flavours. The tuna\u2019s flesh mixing with the hot, tasty cheese, running onto your fingers. Feel the thrill to your taste buds, the rustling of your memory as it recalls the irresistible draw of forbidden fruit.\r\n\r\nOf course, you can choose the type of bread as well as the DNA of your cheese. Your little ones will gobble down this simple grilled-cheese sandwich \u2013 especially if served with a delicious canned vegetable cream soup or even some chicken and rice soup. With a little creativity, a heat source and a sprinkling of love, you\u2019ll most certainly transform these two staples, bread and cheese, into a true culinary masterpiece.\r\n\r\nYou too will be able to metamorphose this plain grilled cheese into a dazzling meal for your loved ones.
