Jadis, clamait-il, sa tendre Roselle lui en pr\u00e9parait chaque lundi dans un immense plat de cuisson pour bien commencer la semaine, et pour qu\u2019il en reste jusqu\u2019au mercredi. Avec du ketchup vert et du rouge fait maison, Claude s\u2019empiffrait et en redemandait tellement le p\u00e2t\u00e9 sorti du four embaumait leur petite cuisine. La recette \u00e9tait simple\u00a0: b\u0153uf hach\u00e9, ma\u00efs en grains et pommes de terre en pur\u00e9e dans lesquelles Roselle mettait une grosse cuill\u00e9r\u00e9e de margarine. Lorsque la minuterie du four sonnait, Roselle enfilait ses mitaines en fibres d\u2019amiante, ouvrait la porte du four et sortait le plat fumant. Pourquoi diable nomme-t-on cette \u00e9ni\u00e8me merveille du monde \u00ab\u00a0UN P\u00c2T\u00c9 CHINOIS\u00a0\u00bb?<\/p>\n<p>Tr\u00e8s cher Claude, toi qui en as tellement mang\u00e9, connais-tu au moins l\u2019origine de ce mets? M\u00eame moi, qui mangeais de la morue cinq \u00e0 six fois par semaine en Gasp\u00e9sie, je me souviens du p\u00e2t\u00e9 chinois dominical comme d\u2019un repas de gala. Oui, oui! Lorsque mon p\u00e8re sortait son petit hachoir \u00e0 viande en acier inoxydable et qu\u2019il l\u2019installait sur un coin de la table en bois de la cuisine, mes s\u0153urs et moi anticipions la f\u00eate du bl\u00e9 d\u2019Inde. Ma m\u00e9moire d\u00e9faille, je ne me souviens plus si nous avions du ketchup rouge en bouteille \u00e0 cette \u00e9poque.<\/p>\n<p>J\u2019ai entendu un nombre incalculable de versions au sujet de l\u2019origine du fameux p\u00e2t\u00e9 chinois. Certes, je trouve quelques-unes d\u2019entre elles plus vraisemblables que d\u2019autres. Par exemple, il y a tr\u00e8s longtemps, pour aider \u00e0 la construction du chemin de fer dans l\u2019Ouest canadien, les autorit\u00e9s canadiennes auraient fait appel \u00e0 des Orientaux qui d\u00e9barquaient ici en grand nombre. Il s\u2019agissait \u00e0 l\u2019\u00e9poque du \u00ab\u00a0cheap labour\u00a0\u00bb, de la main-d\u2019\u0153uvre bon march\u00e9. Ces cuisiniers immigrants, charg\u00e9s de nourrir les ouvriers, auraient ajout\u00e9 le ma\u00efs au m\u00e9lange de viande et de pommes de terre, puisqu\u2019il \u00e9tait peu co\u00fbteux et disponible en grande quantit\u00e9. Bien que je trouve cette version plausible, elle s\u2019av\u00e8re lourdement critiqu\u00e9e.<\/p>\n<p>\u00c0 ce que disent d\u2019autres sources, peut-\u00eatre qu\u2019un v\u00e9ritable Fran\u00e7ais de France, fra\u00eechement d\u00e9barqu\u00e9 au pays, aurait tout simplement d\u00e9cid\u00e9 de pr\u00e9parer un hachis parmentier en y ajoutant, pour y donner de la \u00ab\u00a0couleur locale\u00a0\u00bb, du bl\u00e9 d\u2019Inde \u00e0 vache trouv\u00e9 sur son chemin.<\/p>\n<p>En grande curieuse que je suis, j\u2019ai demand\u00e9 son avis \u00e0 l\u2019ami Google. Le \u00ab\u00a0China pie\u00a0\u00bb serait originaire de la ville de China, dans l\u2019\u00e9tat du Maine au sud de la fronti\u00e8re o\u00f9 de nombreux Qu\u00e9b\u00e9cois avaient \u00e9migr\u00e9. En revenant au Qu\u00e9bec, le nom aurait \u00e9t\u00e9 traduit simplement par \u00ab\u00a0p\u00e2t\u00e9 chinois\u00a0\u00bb. La recette, rassasiante et \u00e9conomique, \u00e9tait simple \u00e0 reproduire et elle est devenue un classique de la cuisine qu\u00e9b\u00e9coise.<\/p>\n<p>Comme tous les chemins m\u00e8nent \u00e0 Rome, je pourrais presque affirmer que toutes les recettes de p\u00e2t\u00e9 chinois se valent et s\u2019\u00e9galisent en saveurs. Je me souviens qu\u2019\u00e0 mes d\u00e9buts comme cuisini\u00e8re de casse-cro\u00fbte, la folle du logis dans ma t\u00eate exp\u00e9rimentait plusieurs variantes afin de surprendre et r\u00e9jouir mes fid\u00e8les clients. Je mettais du veau au lieu du b\u0153uf ou je m\u00ealais les deux; quelquefois, je passais un restant de porc \u00e0 cretons. Puis, \u00e0 d\u2019autres moments, j\u2019ajoutais deux ou trois patates douces dans ma pur\u00e9e de pommes de terre juste pour impressionner la galerie. Il m\u2019arrivait aussi de m\u00e9langer le ma\u00efs en grains avec des petits pois verts.<\/p>\n<p>\u00c0 ma fa\u00e7on, dans un solide chaudron, je fais sauter un beau gros oignon coup\u00e9 en d\u00e9s dans de l\u2019huile chaude. J\u2019ajoute ensuite environ deux livres de b\u0153uf ou de veau et je laisse cuire jusqu\u2019\u00e0 la r\u00e9duction compl\u00e8te du jus de cuisson et jusqu\u2019\u00e0 ce que la viande colle un tantinet au fond. Puis, j\u2019y m\u00e9lange deux cuill\u00e8res \u00e0 soupe de sauce HP et un peu de thym s\u00e9ch\u00e9. Je retire la viande du feu et la verse dans un plat de cuisson assez profond. J\u2019\u00e9tends ensuite une bo\u00eete de 12\u00a0onces de ma\u00efs en cr\u00e8me et la m\u00eame quantit\u00e9 de ma\u00efs en grains sur la viande. Depuis quelques ann\u00e9es, j\u2019utilise le ma\u00efs congel\u00e9 qui me semble plus ferme, m\u00eame d\u00e9congel\u00e9. Je r\u00e9duis sept \u00e0 huit grosses pommes de terre en pur\u00e9e pour recouvrir tout le ma\u00efs. Je pars\u00e8me finement du sel et du poivre et quelques noix de beurre.<\/p>\n<p>Mise en garde\u00a0:<br \/>\nLorsque les pommes de terre sont cuites, retirez l\u2019eau et laissez-les sur le feu quelques instants pour qu\u2019elles s\u00e8chent un peu en prenant soin qu\u2019elles ne collent pas. Attention aux grumeaux en les pilant. Je ne l\u2019ai jamais fait, mais vous pourriez aussi ajouter trois jaunes d\u2019\u0153ufs \u00e0 la pur\u00e9e pour une meilleure consistance.<\/p>\n<p>Tr\u00e8s chers lecteurs, les gros mois d\u2019hiver sont arriv\u00e9s \u00e0 pas de g\u00e9ants.
