Pour l\u2019instant, nous vivons dans une galerie d\u2019art comparable au Louvre de Paris. Je sais pourtant qu\u2019au d\u00e9but de novembre, un peu partout sur nos devantures de maison, des citrouilles massacr\u00e9es agoniseront en silence, des araign\u00e9es g\u00e9antes se tisseront des \u00e9chelles pour descendre des goutti\u00e8res et des serpents mordor\u00e9s claqueront des dents en s\u2019enfuyant d\u2019en dessous de nos galeries.<\/p>\n<p>Puis la froidure s\u2019installera, le blanc de l\u2019hiver couvrira la terre et, incessamment, le moment s\u2019imposera de penser aux festins du temps des F\u00eates. Je m\u2019y vois d\u00e9j\u00e0\u00a0: je m\u2019installe \u00e0 l\u2019immense table de la cuisine avec mon grand tablier blanc attach\u00e9 sur une veste immacul\u00e9e, les manches retourn\u00e9es, les cheveux cach\u00e9s, des souliers confortables, de la musique baroque et un thermos de caf\u00e9 br\u00fblant.<\/p>\n<p>Quand le moment de cuisiner mes feuillet\u00e9s aux \u00e9pinards sera enfin arriv\u00e9, je d\u00e9poserai sur la table un immense bol dans lequel je m\u00e9langerai tous les ingr\u00e9dients pour faire la p\u00e2te phyllo. Je cuisine cette recette depuis plus de 50\u00a0ans et, sans rien mesurer, je sais que la p\u00e2te malax\u00e9e donnera cinq grandes t\u00f4les rondes de 15\u00a0pouces de diam\u00e8tre et d\u2019un pouce et demi de hauteur. Au pif, quelque 20\u00a0morceaux de d\u00e9licieux feuillet\u00e9s par t\u00f4le.<\/p>\n<p>Voil\u00e0 comment \u00e7a se passe chaque fois. Dans le gros bol, je mets de la farine blanche, du shortening v\u00e9g\u00e9tal de la marque Crisco, des \u0153ufs battus, une fine pluie de sel et du \u00ab\u00a0Seven Up\u00a0\u00bb pour lier le tout en malaxant la p\u00e2te \u00e0 la main. Plus mes pr\u00e9cieuses mains s\u2019affairent dans le bol et plus le m\u00e9lange devient doux et docile. Je la divise en 25\u00a0petites boules de la taille d\u2019une orange et, avec le rouleau \u00e0 p\u00e2te, j\u2019\u00e9tends chacune d\u2019elles en une feuille \u00e0 la grandeur d\u2019une assiette d\u2019environ 9\u00a0pouces. Avec un pinceau, je beurre chaque feuille \u00e0 profusion et reforme chaque boule pour qu\u2019elles reposent. Pendant ce temps, je sors mon gros chaudron pour pocher rapidement 25\u00a0sacs d\u2019\u00e9pinards du commerce, puis je les essore m\u00e9ticuleusement. Dans une grande po\u00eale, je les fais rissoler avec un peu de beurre, des \u00e9chalotes et beaucoup d\u2019aneth. Lorsque le m\u00e9lange a refroidi, j\u2019ajoute une bonne quantit\u00e9 de feta r\u00e2p\u00e9 grossi\u00e8rement.<\/p>\n<p>J\u2019en suis \u00e0 mon troisi\u00e8me caf\u00e9 lorsqu\u2019arrive le plus laborieux du travail. Il s\u2019agit de reprendre chacune des 25\u00a0petites boules bourr\u00e9es de beurre et de les aplatir une deuxi\u00e8me fois avec le rouleau \u00e0 p\u00e2te jusqu\u2019\u00e0 ce qu\u2019elles atteignent la dimension des grandes t\u00f4les.<\/p>\n<p>Dans chaque t\u00f4le bien beurr\u00e9e, je d\u00e9pose une premi\u00e8re feuille ronde que je badigeonne de beurre. Puis une deuxi\u00e8me badigeonn\u00e9e et sur la troisi\u00e8me feuille, j\u2019\u00e9tale uniform\u00e9ment un cinqui\u00e8me du m\u00e9lange d\u2019\u00e9pinards-feta sur toute la surface. Je recouvre ensuite le tout avec la quatri\u00e8me feuille g\u00e9n\u00e9reusement badigeonn\u00e9e et finalement la derni\u00e8re feuille, celle du dessus, qui devra \u00eatre outrageusement beurr\u00e9e. Comme c\u2019est une p\u00e2te phyllo maison, mieux vaut utiliser du vrai beurre.<\/p>\n<p>Avant d'enfourner les t\u00f4les, je coupe les morceaux en carr\u00e9s d\u2019environ deux pouces et les recoupe lorsqu\u2019ils sortent du four pour \u00e9viter de les briser. Comme mes t\u00f4les sont rondes, plusieurs morceaux sont in\u00e9gaux.<\/p>\n<p>Je me souviens tellement du temps o\u00f9 mes ados tournaillaient dans la cuisine, attir\u00e9s par l\u2019odeur enivrante des feuillet\u00e9s tout juste sortis du four. Sous pr\u00e9texte de prendre les morceaux biscornus, ils vidaient un tiers de la grande t\u00f4le avant qu\u2019elle ait le temps de refroidir.<\/p>\n<p>On peut congeler les t\u00f4les de feuillet\u00e9s non cuits, ou cuits puis refroidis, sans probl\u00e8me. Je m\u2019empresse de les mettre au cong\u00e9lateur si je veux qu\u2019il en reste pour le temps des F\u00eates! Right now, we are living in an art gallery as grand as the Louvre in Paris. But I know that at the beginning of November, massacred pumpkins will perish in silence in front of almost every house, giant spiders will weave silk ladders to climb down from the gutters and golden snakes will slither out from beneath our porches, teeth chattering.\r\n\r\nThe weather will grow even colder, winter will cover the ground with its white blanket and, very shortly, I\u2019ll be thinking of preparing for holiday feasts. I can already picture it: a large white apron worn over my immaculate chef\u2019s white jacket, sleeves rolled up; a net covering my hair; comfortable shoes; baroque music playing in the background; and a thermos of steaming hot coffee. I take my position at the large kitchen table.\r\n\r\nThe time to bake my spinach puffs is finally here! I place an enormous bowl for mixing the phyllo dough ingredients on the table. I\u2019ve been making this recipe for 50 years and, without measuring a single ingredient, I already know that the kneaded dough will give me 5 large round sheets 15 inches in diameter and 1\u00bd inches high. This will make about 20 delicious spinach puffs per baking sheet.\r\n\r\nIn the large bowl, I put some white flour, Crisco all-vegetable shortening, beaten eggs, a pinch of salt and some Seven Up to bind the mixture as I knead the dough by hand. The more my expert hands get busy in the bowl, the more the dough becomes soft and yielding. I divide it in 25 small balls the size of an orange and flatten them out with the rolling pin to the size of a 9-inch plate. I brush each small sheet of dough with a thick coat of melted butter and roll them back into a ball. I let them rest for a moment while I take out a pot and quickly blanch 25 bags of store-bought spinach. I then drain the water and carefully wring out the moisture from the greens. In a large saucepan, I brown the spinach with a little butter, green onions and a generous amount of dill. When the mixture has cooled, I add in lots of coarsely grated feta.\r\n\r\nI\u2019m already on my third coffee when it\u2019s time for the most laborious part of the recipe. I have to take the 25 small, buttered dough balls and roll each one out again to the size of the large baking sheets.\r\n\r\nI place a thin round sheet of dough on a greased baking sheet and baste it with butter. Then I layer a second and third buttery sheet of dough. Next, I spread one-fifth of the spinach-feta mixture evenly over the top. This is covered with two more generously buttered sheets. The last sheet, however, has to have a lavish coating of butter. Since this is homemade phyllo dough, using real butter is essential.\r\n\r\nBefore I place the baking sheets in the oven, I cut the dough into 2-inch squares. As soon as they come out of the oven, I cut them again to ensure they maintain their shape. I\u2019ve always used round baking sheets, so some of the pieces end up uneven.\r\n\r\nI still remember the days when my teenage kids would hang around in the kitchen, enticed by the intoxicating smell of the freshly baked puff pastries. Under the pretext of taking the uneven pieces, they would clear a third of the baking sheet before the puffs even had time to cool down.\r\n\r\nSpinach puffs can easily be frozen before or after baking once they cool. I have to quickly place them in the freezer if I want to have any left for the holidays!
