Comment l&#x2019;aurai-je su? Moi qui n&#x2019;ai appris, pendant trop longtemps, que des mati&#xE8;res immat&#xE9;rielles telles que la litt&#xE9;rature, l&#x2019;histoire, les langues anciennes et la philosophie. Divorc&#xE9;e et fauch&#xE9;e, je&#xA0;voulais juste gagner ma cro&#xFB;te et nourrir&#xA0;mes trois enfants.&#xA0;<\/p>\n<p>Mes d&#xE9;buts en affaires&#xA0;sont beaucoup moins prestigieux que ce que vous pourriez penser. Peut-&#xEA;tre suis-je tomb&#xE9;e par hasard dans la potion magique!<\/p>\n<p>La v&#xE9;rit&#xE9; c&#x2019;est que je n&#x2019;ai pas choisi la restauration. C&#x2019;est plut&#xF4;t elle qui s&#x2019;est impos&#xE9;e &#xE0; moi. Mon p&#xE8;re avait raison de me dire que les &#xE9;tudes classiques&#xA0;ne valaient rien lorsqu&#x2019;il fallait gagner sa vie. En v&#xE9;rit&#xE9;, ces grandes &#xE9;tudes entass&#xE9;es&#xA0;dans ma caboche m&#x2019;ont caus&#xE9; plus de tort que de bien&#xA0;lorsqu&#x2019;arriva l&#x2019;heure fatidique de devoir travailler pour vivre.&#xA0;<\/p>\n<p>J&#x2019;&#xE9;tais &#xE0; cette &#xE9;poque une pauvre intellectuelle divorc&#xE9;e et tellement triste de devoir se r&#xE9;signer &#xE0; travailler avec ses mains plut&#xF4;t qu&#x2019;avec sa prose. C&#x2019;est pourtant ainsi que j&#x2019;allais rapidement exceller. Ayant vendu in extremis la maison familiale que la banque avait dans sa mire, j&#x2019;ai ouvert le premier Cora sans id&#xE9;e pr&#xE9;con&#xE7;ue, ni passion particuli&#xE8;re pour la nourriture, ni r&#xEA;ve de grandeur ou de r&#xE9;ussite &#xE9;clatante. J&#x2019;allais cuisiner, servir des clients, nettoyer le bouiboui et apporter &#xE0; l&#x2019;appartement les restes de nourriture pour le souper des enfants. <\/p>\n<p>Mais me voil&#xE0; pourtant comme un &#xAB;&#x2009;dumpling&#x2009;&#xBB;, la t&#xEA;te &#xE9;mergeant du bouillon. Soudainement happ&#xE9;e par un second niveau de signification, je me suis mise &#xE0; donner de l&#x2019;importance aux gestes, aux choses et aux cr&#xE9;ations alimentaires nouvellement install&#xE9;es dans ma t&#xEA;te de patronne malgr&#xE9; elle. Chaque jour, je me surprenais &#xE0; vouloir embellir, mieux faire, ajouter de la couleur et une saveur inoubliable &#xE0; chaque assiette. Sans m&#x2019;en rendre compte, les rondelles de bananes, les fraises et les framboises se sont mises &#xE0; danser sur les tranches de pain dor&#xE9;. Les bleuets frais sautaient sur les triangles de melon avec les gros raisins rouges, les quartiers de pommes, de poires et de p&#xEA;ches juteuses.&#xA0;<\/p>\n<p>Deux mois plus tard, j&#x2019;ai cr&#xE9;&#xE9; le premier horaire du personnel, une liste des denr&#xE9;es &#xE0; cocher au besoin, un rapport quotidien de fermeture de caisse avec le nombre de clients et le montant&#xA0;d&#x2019;argent, ainsi qu&#x2019;un mod&#xE8;le de fermeture de mois afin que je puisse suivre notre progression. Puis j&#x2019;ai cousu moi-m&#xEA;me des tabliers fleuris pour les serveuses.<\/p>\n<p>Dans ce premier resto Cora, jour apr&#xE8;s jour, sans vraiment le r&#xE9;aliser, nous avons cr&#xE9;&#xE9; tout ce que nous appellerions plus tard &#xAB;&#x2009;le concept Cora&#x2009;&#xBB;.&#xA0;&#xC9;purant la tradition d&#x2019;alors, j&#x2019;ai am&#xE9;lior&#xE9; chaque recette, chaque choix d&#x2019;aliment, y compris le sirop sur les cr&#xEA;pes d&#xE9;licieuses et une cr&#xE8;me p&#xE2;tissi&#xE8;re hors du commun. Mon assurance en cuisine grossissait aussi vite que les files d&#x2019;attente quotidiennes &#xE0; notre porte.<\/p>\n<p>Je m&#x2019;en souviens tellement. Ignorant encore la port&#xE9;e de mes gestes, j&#x2019;organisais dans ma t&#xEA;te le travail &#xE0; faire et le monde autour de moi pour le faire.&#xA0; Inconsciemment, je nous pr&#xE9;parais &#xE0; croire &#xE0; une r&#xE9;alit&#xE9; encore invisible &#xE0; l&#x2019;&#x153;il nu.<\/p>\n<p>Voici humblement le d&#xE9;but de mon leadership. Je n&#x2019;avais certes pas choisi cette vocation, mais je me suis adapt&#xE9;e &#xE0; la situation. Au lieu de m&#x2019;apitoyer sur mes mis&#xE8;res, je me suis attel&#xE9;e &#xE0; la t&#xE2;che pour tirer nos vies vers des jours meilleurs.<\/p>\n<p>Et parce que je me suis engag&#xE9;e &#xE0; r&#xE9;ussir, j&#x2019;ai fait plein d&#x2019;efforts que d&#x2019;autres n&#x2019;ont pas faits et j&#x2019;ai eu les r&#xE9;sultats que ces autres n&#x2019;ont pas connus. J&#x2019;ai commenc&#xE9; tr&#xE8;s t&#xF4;t &#xE0; convaincre mes enfants et les quelques premiers employ&#xE9;s que nous faisions davantage que de servir les clients; que nous &#xE9;tions en train de construire quelque chose, une id&#xE9;e, une fa&#xE7;on de faire diff&#xE9;rente de ce qui existait ailleurs.<\/p>\n<p>Bien s&#xFB;r, je manquais de mots et de connaissances pour articuler correctement l&#x2019;&#x153;uvre &#xE0; laquelle nous participions et dont nous devenions les humbles serviteurs.&#xA0;<\/p>\n<p>Je ne sais pas o&#xF9; j&#x2019;ai trouv&#xE9; le courage et la d&#xE9;termination n&#xE9;cessaires &#xE0; entretenir cette chim&#xE8;re jusqu&#x2019;&#xE0; ce qu&#x2019;elle puisse &#xE9;merger du n&#xE9;ant et vivre par elle-m&#xEA;me. J&#x2019;en suis consciente aujourd&#x2019;hui. Dans ce premier petit restaurant de 29&#xA0;places assises ouvert en mai 1987, j&#x2019;ai accouch&#xE9; d&#x2019;un concept extraordinaire. Et comme une vraie m&#xE8;re, j&#x2019;ai veill&#xE9; moi-m&#xEA;me mon b&#xE9;b&#xE9; jour et nuit. En cuisinant, en inventant et en dormant, je n&#x2019;ai pens&#xE9; qu&#x2019;&#xE0; lui, &#xE0; son bien-&#xEA;tre et &#xE0; sa p&#xE9;rennit&#xE9;. J&#x2019;ai assum&#xE9; toutes les responsabilit&#xE9;s li&#xE9;es &#xE0; sa croissance, aidant les gens autour de lui &#xE0; mieux le servir et prenant soin de nous garder, mes enfants, mon &#xE9;quipe et moi, &#xE0; l&#x2019;abri du chaos pessimiste des incr&#xE9;dules.<\/p>\n<p>C&#x2019;est avec l&#x2019;arriv&#xE9;e du concept Cora qu&#x2019;est n&#xE9;e la patronne en moi. Mes enfants ayant d&#xE9;j&#xE0; fait de moi une maman, la naissance du concept CORA a fait de moi un chef, un leader qui, comme une maman attentive, s&#x2019;est mise &#xE0; acqu&#xE9;rir, sur le tas et dans l&#x2019;&#xE9;preuve, chacune des forces qui lui serviraient &#xE0; accompagner l&#x2019;enfant jusqu&#x2019;&#xE0; maturit&#xE9;.<\/p>\n<p>J&#x2019;ai voulu enseigner par l&#x2019;exemple et ne jamais exiger de quelqu&#x2019;un ce que je n&#x2019;&#xE9;tais pas pr&#xEA;te &#xE0; faire moi-m&#xEA;me. J&#x2019;ai &#xE9;t&#xE9; disciplin&#xE9;e et s&#xE9;v&#xE8;re, &#xE9;cartant de moi tout ce qui mena&#xE7;ait la r&#xE9;alisation de mes objectifs. &#xC7;a n&#x2019;a pas toujours &#xE9;t&#xE9; facile de croire au potentiel de mes id&#xE9;es; pas facile du tout de croire &#xE0; un concept b&#xE2;ti sur une montagne de coquilles d&#x2019;&#x153;ufs.<\/p>\n<p>Ma t&#xEA;te, certains jours, &#xE9;tait aussi d&#xE9;munie qu&#x2019;un oc&#xE9;an vid&#xE9; de ses poissons et il fallait&#xA0;chaque fois me reconstruire. Laver &#xE0; grand cycle mes doutes et mes craintes et &#xE9;tendre en plein soleil ma d&#xE9;termination et mes objectifs.&#xA0;<\/p>\n<p>Le malheur lorsqu&#x2019;on est le LEADER d&#x2019;une entreprise c&#x2019;est qu&#x2019;il n&#x2019;existe pas d&#x2019;autorit&#xE9; sup&#xE9;rieure susceptible de nous accorder un petit &#xAB;&#x2009;bravo&#x2009;&#xBB; ou un &#xAB;&#x2009;tr&#xE8;s bien&#x2009;&#xBB; entre deux r&#xE9;unions. Peut-&#xEA;tre est-ce pour cette raison que j&#x2019;avais accroch&#xE9; dans mon premier resto la photo de mon papa, d&#xE9;c&#xE9;d&#xE9; avant m&#xEA;me que je d&#xE9;marre en affaires. J&#x2019;avais tellement besoin de ces petits mots d&#x2019;encouragement &#xE0; mes d&#xE9;buts et paradoxalement, on dirait que c&#x2019;est l&#x2019;&#xE9;poque o&#xF9; ils ont &#xE9;t&#xE9; les plus rares.<\/p>\n<p>Dieu merci, ce sont les immenses sourires des clients qui m&#x2019;ont toujours gard&#xE9;e saine d&#x2019;esprit et combative. How could I have? I had spent so many years studying impractical subjects such as literature, history, ancient languages and philosophy. Divorced and penniless, I simply wanted to earn a living and feed my three kids.&#xA0;<\/p>\n\n\n\n<p>My start in business is not as illustrious as you might think. I somehow just stumbled upon this &#x201C;magic potion&#x201D;!<\/p>\n\n\n\n<p>The truth is that I did not choose the restaurant business. Rather, it chose me. My father was right when he said classical studies are useless for earning a living. The truth is, all those studies crammed into my head did me more harm than good on that fateful day when I was forced to start providing for my family.<\/p>\n\n\n\n<p>At that time, I was a poor, divorced intellectual, unhappily resigned to working with my hands instead of my prose. Yet success came quickly. I had sold the family home, which the bank was already eyeing, in an act of desperation, and opened the first Cora diner without any preconceived ideas, any particular passion for food or any dream of greatness or dazzling success. I was going to cook, serve customers, clean up and then take the leftovers back to the apartment for the kids&#x2019; supper. <\/p>\n\n\n\n<p>But there I was, like an accidental dumpling, with my head bobbing in the broth. Suddenly seized by another way of seeing things, I began giving importance to gestures, things and new dishes that kept appearing for the first time in my boss&#x2019;s mind. Each day, I surprised myself by wanting to embellish, perfect or add colour or a memorable flavour to every plate. Without realizing it, the banana wheels, strawberries and raspberries began to dance on the slices of French toast. Fresh blueberries jumped on melon wedges, along with big red grapes and juicy slices of apples, pears and peaches. <\/p>\n\n\n\n<p>Two months later, I made up my first staff schedules, a food inventory checklist, a daily cash closing report with the number of customers and the day&#x2019;s intake, and a month-end closing sheet to track our progress. Then I sewed aprons with flower motifs for the waitresses.<\/p>\n\n\n\n<p>Without realizing it, day after day, we created what we would later call &quot;the Cora concept&quot; in that first location.&#xA0;As was our habit at the time, I perfected each recipe and food selection, tweaking the syrup for our delicious pancakes and concocting a wonderful pastry cream. My confidence in the kitchen mushroomed as fast as the daily lineups at the door.<\/p>\n\n\n\n<p>I remember it so well: Still unaware of the impact of my actions, I was mentally organizing all the work that had to be done and the team to do it. I was unknowingly laying the groundwork that would one day allow us to believe in a reality we couldn&#x2019;t yet imagine. <\/p>\n\n\n\n<p>These are the humble beginnings of my time in the captain&#x2019;s chair. I certainly didn&#x2019;t choose this calling, I was simply adapting to a new reality. Instead of feeling sorry for myself, I got on with the job; pulling ourselves out of poverty, towards better days.<\/p>\n\n\n\n<p>I dedicated every waking moment to our success, and because of that, I put in a lot of effort that others didn&#x2019;t and achieved exceptional results that others didn&#x2019;t. I started early on to persuade my children and our first few employees that we weren&#x2019;t just serving customers; we were building something new &#x2013; an idea, a different way of doing things than what existed.<\/p>\n\n\n\n<p>Of course I lacked the words and the knowledge to properly articulate the project we had embarked upon. We were on our way to becoming its humble servants.<\/p>\n\n\n\n<p>I don&apos;t know where I found the courage and determination to keep this dream alive until it could emerge from the void and thrive on its own. I realize this today. In that first small 29-seat restaurant, which opened its doors in May 1987, I gave birth to a concept as powerful as the sun itself. And like a true mother, I tended to my newborn day and night.&#xA0;While cooking, inventing and sleeping, I thought only of its well-being and future. I took on all the duties related to its growth; helping everyone around me to serve it better while shielding myself, my children and my team from the harmful negativity of naysayers.<\/p>\n\n\n\n<p>The arrival of the Cora concept released the &#x201C;boss&#x201D; within me. My children had made me a mother; the birth of the Cora concept made me a leader. A leader who, like an attentive mother, began to learn on the job and put her abilities to the test as she nurtured her child to maturity.<\/p>\n\n\n\n<p>I wanted to teach by example and never ask anyone to do something that I was not prepared to do myself. I was disciplined and strict, keeping anything that threatened my success at bay. It wasn&#x2019;t always easy to believe in the potential of my ideas; in fact, it was very challenging to hold on to a concept built on a mountain of eggshells.<\/p>\n\n\n\n<p>Some days my head was as helpless as an ocean emptied of fish. Each time, I had to begin again from square one. I had to run my doubts and fears through the heavy-duty cycle to wash them away and then lay my determination and ambitions out in the sun.&#xA0;<\/p>\n\n\n\n<p>The unfortunate thing about being a leader of a company is that there isn&#x2019;t a higher authority to throw you a little &#x201C;bravo&#x201D; or &#x201C;very good&#x201D; in between meetings. Maybe that&#x2019;s why I hung a picture of my father, who passed away before I started my business, in my first restaurant.
