Lorsque le sang arr\u00eate de couler, l\u2019animal rose est suspendu, la t\u00eate en bas, \u00e0 la grosse poutre de la grange. Mon grand-p\u00e8re lui ouvre le ventre et imm\u00e9diatement tout l\u2019int\u00e9rieur de l\u2019animal tombe sur la t\u00f4le plac\u00e9e juste en dessous. La grand-m\u00e8re Jos\u00e9phine fouille dans les entrailles fumantes et en sort un amoncellement de tubes brun\u00e2tres \u00e0 la vue desquels fr\u00e9rot s\u2019esclaffe en se pin\u00e7ant le nez.<\/p>\n<p>\u2014\u00a0C\u2019est l\u2019intestin du cochon, dit ma m\u00e8re. On va le vider, le tourner \u00e0 l\u2019envers et s\u2019en servir pour faire le boudin.<\/p>\n<p>\u2014\u00a0Beurk! fait la toute petite\u00a0en courant se r\u00e9fugier dans les bras de la cousine Florine.<\/p>\n<p>Grand-p\u00e8re a le fou rire; c\u2019est la premi\u00e8re fois que nous, les filles, assistons \u00e0 ce spectacle et il s\u2019amuse de nos r\u00e9actions. Il crie gaiement au cousin Georges d\u2019apporter la chaudi\u00e8re d\u2019eau bouillante et s\u2019empresse d\u2019en \u00e9clabousser le cochon. Grand-m\u00e8re est toute fi\u00e8re de sa journ\u00e9e.<\/p>\n<p>\u2014\u00a0Avec une aussi grosse b\u00eate, on va s\u00fbrement avoir des grillades de lard jusqu\u2019\u00e0 P\u00e2ques! conclut-elle en serrant sur son ventre une bassine de panne.<\/p>\n<p>Moi, j\u2019ai mal au c\u0153ur et je me demande si un jour on va faire la m\u00eame chose \u00e0 la belle jument Doley.<\/p>\n<p>Gr\u00e2ce \u00e0 mon p\u00e8re qui, \u00e0 l\u2019occasion, rapporte de chez ses patrons anglais deux grosses caisses de beurre d\u2019arachides cr\u00e9meux, le matin nous engloutissons cinq, sept et m\u00eame dix \u00ab\u2009toasts\u2009\u00bb d\u2019affil\u00e9e pendant que maman ronfle encore, ses mains enrubann\u00e9es reposant plus haut que sa t\u00eate sur l\u2019oreiller.<\/p>\n<p>Elle nous aime m\u00eame si elle ne se l\u00e8ve jamais le matin pour faire chauffer le lait ou pour d\u00e9layer le \u00ab\u2009Tang\u2009\u00bb (jus d\u2019orange en poudre). Combien de fois a-t-elle\u00a0d\u00fb enfiler d\u2019\u00e9normes gants de caoutchouc noir pour p\u00e9trir la p\u00e2te \u00e0 pain des \u00e9normes fesses que nous tranchons maladroitement le lendemain?<\/p>\n<p>Le ton monte dans la cuisine lorsque fr\u00e9rot fait br\u00fbler une croute trop \u00e9paisse ou qu\u2019il oublie de retourner le carr\u00e9 de pain dans le toaster \u00e0 clapets.<\/p>\n<p>\u2014\u00a0Faut jamais jeter une tranche de pain! crie maman, r\u00e9veill\u00e9e par l\u2019odeur; un peu de roussi fera du bien \u00e0 vos cordes vocales.<\/p>\n<p>Nous recevons chacun une orange \u00e0 No\u00ebl, des bananes pour une f\u00eate et des pommes \u00e0 l\u2019occasion, les ann\u00e9es o\u00f9 la tante Hope r\u00e9ussit \u00e0 pr\u00e9server son verger des attaques de chenilles blanches. Les\u00a0petites fraises arrivent avec les grandes vacances et il nous faut en cueillir le plus possible si nous voulons convaincre maman de faire des confitures.<\/p>\n<p>Papa pr\u00e9f\u00e8re les framboises sauvages, mais elles sont cach\u00e9es dans des buissons remplis d\u2019abeilles. La t\u00eate envelopp\u00e9e d\u2019un vieux linge \u00e0 pansement et les mains prot\u00e9g\u00e9es par les gants de caoutchouc du p\u00e9trissage, fr\u00e9rot joue au valeureux chevalier. \u00c0 la condition de le laisser apporter lui-m\u00eame le panier de framboises \u00e0 papa, il nous pr\u00e9c\u00e8de dans les escarpements et entrouvre les arbrisseaux afin que nous puissions cueillir les pr\u00e9cieuses baies.<\/p>\n<p>Selon les ann\u00e9es, nous ramassons aussi des bleuets; ceux-ci sont minuscules et jamais assez m\u00fbrs, d\u2019apr\u00e8s maman, pour donner suffisamment de jus dans le pouding renvers\u00e9.<\/p>\n<p>Quant aux groseilles poilues et piquantes, nous les \u00e9vitons depuis que la tante Magella a entrepris d\u2019en faire des cataplasmes \u00e0 coller au ventre de la toute petite pour qu\u2019elle arr\u00eate de mouiller son lit.<\/p>\n<p>Certains \u00e9t\u00e9s, apr\u00e8s les foins, grand-p\u00e8re Frederic nous am\u00e8ne aux noisettes muni d\u2019une vieille poche \u00e0 patates en jute dans lequel nous d\u00e9posons les petites boules piquantes coll\u00e9es en paquet de trois sur les branches des noisetiers. Les noisettes devront s\u00e9cher dans la grange quelques mois avant que grand-p\u00e8re puisse les d\u00e9barrasser de leurs enveloppes en frappant la poche \u00e0 plusieurs reprises contre le mur en pierre de l\u2019\u00e9table.<\/p>\n<p>Les noisettes blondes seront gard\u00e9es dans les vieilles canisses en fer blanc de grand-m\u00e8re jusqu\u2019\u00e0 ce que celle-ci d\u00e9cide que nous avons \u00e9t\u00e9 assez sages pour en manger; et encore ne nous en donne-t-elle que quelques-unes \u00e0 la fois, le dimanche.<\/p>\n<p>Le go\u00fbt des petits fruits, du poisson aux grillades de lard, du pouding sucr\u00e9 ou de toute autre nourriture \u00e0 cette \u00e9poque n\u2019est jamais assez savoureux pour se transformer en gourmandise. Manger, selon maman, est une fonction plut\u00f4t \u00ab\u2009technique\u2009\u00bb qui permet de garder le corps droit, les joues roses et les ongles bien durs. Nous savons aussi que la pr\u00e9paration des repas la fait souffrir. \u00c7a se voit \u00e0 la fa\u00e7on monotone qu\u2019elle a de d\u00e9piauter un lapin\u00a0ou de plumer une perdrix tout en me faisant r\u00e9citer mes le\u00e7ons.<\/p>\n<p>Patates rondes, carottes, navets, morue, \u00e9perlans, petites truites de ruisseau, b\u0153uf en sauce, chops de porc, boudin et balon\u00e9 r\u00f4ti composent notre alimentation. Fin ao\u00fbt, quelques bouillis de l\u00e9gumes apparaissent sur la table avec des morceaux de lard sal\u00e9 et le bl\u00e9 d\u2019Inde du champ du grand-p\u00e8re.<\/p>\n<p>Une fois par printemps, les bonnes ann\u00e9es, papa rapporte \u00e0 la maison des homards vivants aux pinces immobilis\u00e9es par de gros \u00e9lastiques bleus. Plong\u00e9es dans l\u2019eau bouillante, les b\u00eates en ressortent aussi rouges que le feu. Papa les d\u00e9pose dans une grande assiette en plein milieu de la table et, devant nous, avec un marteau et le gros couteau de cuisine, il entreprend de fendre en deux les corps des crustac\u00e9s en d\u00e9tachant d\u2019abord la grosse queue de chacun puis en nous apprenant si c\u2019est m\u00e2le ou une femelle. Puis avec une cuill\u00e8re \u00e0 soupe, il fouille dans la bedaine de chaque homard\u00a0pour y recueillir le pr\u00e9cieux foie dont maman raffole.<\/p>\n<p>\u2014\u00a0Beurk! s\u2019esclaffe la petite lorsqu\u2019elle voit sa m\u00e8re \u00e9tendre le foie vert gluant sur un toast.<\/p>\n<p>C'est la f\u00eate dans la cuisine, maman\u00a0riant\u00a0de nous voir manger comme des ogres. Le beurre fondu coule \u00e0 flots sans que personne chicane et papa a l\u2019air tellement heureux.<\/p>\n<p>Cette joyeuse tabl\u00e9e de carcasses rouges s\u2019est imprim\u00e9e dans ma t\u00eate pour toujours. Et chaque printemps j\u2019y repense; j\u2019entends fr\u00e9rot ergoter pour avoir la plus grosse pince,\u00a0maman demander\u00a0gentiment\u00a0\u00e0 papa de d\u00e9cortiquer sa moiti\u00e9 de homard et la toute petite crier pour avoir encore plus de pain \u00e0 saucer dans le beurre. When the blood stopped flowing, the fleshy pink animal would be hung upside down from the barn\u2019s big beam. My grandfather slit open its belly and the animal\u2019s innards slid out onto the sheet metal below. Grandmother Josephine would then rummage through the steaming entrails and pull out a heap of brownish tubing that made my brother pinch his nose and laugh.\r\n\r\n- \u201cThat\u2019s the pig\u2019s intestines,\u201d\u00a0said my mother. \u201cWe\u2019ll empty them, turn them inside out and make blood sausage.\u201d\r\n\r\n- \u201cYuck!\u201d said the little girl, running to cousin Florine to take refuge in her arms.\r\n\r\nGrandpa was having a good chuckle. It\u2019s the first time that us girls had witnessed a pig being dispatched and he found our reactions amusing. He cheerfully yelled over to cousin George to bring the pot of boiling water so he could quickly splash the pig. Grandma was very satisfied with the day.\r\n\r\n- \u201cWith such a big animal, we\u2019ll be able to have grilled bacon until Easter!\u201d she exclaimed as she hugged a bowl of leaf fat to her stomach.\r\n\r\nAs for me, I felt sick, and wondered if one day, the same thing would happen to our beautiful mare Doley.\r\n\r\nMy father would also bring back two large cases of creamy peanut butter from his English bosses sometimes. In the morning, we would wolf down 5, 7 and even 10 pieces of toast in a row as Mom snored away, her bandaged hands placed higher than her head on the pillow.\r\n\r\nShe may have never gotten up to heat the milk or dilute the Tang (powdered orange juice), but she loved us just the same. How many times had she slipped on the big black rubber gloves to knead the dough to make the huge round loaves of bread that we would clumsily slice the next day?\r\n\r\nThe mood in the kitchen would get a little tense if my brother burned a thick slice or forgot to turn the bread in the slide-through toaster.\r\n\r\n- \u201cNever throw away a slice of bread!\u201d shouted mom, awakened by the smell. \u201cThe burnt bits will do your vocal cords good.\u201d\r\n\r\nWe each received an orange at Christmas, bananas for our birthdays and apples on occasion when Aunt Hope managed to safe her orchard from the ravages of white caterpillars. Summer vacation was the season for small wild strawberries, and if we wanted Mom to make jam, we had to pick as many as we could.\r\n\r\nDad preferred wild raspberries, but they were found in bushes full of bees. With his head wrapped in strips of old bandages and his hands protected with the rubber gloves used for kneading bread, my brother played the brave knight on the one condition that he got to present the basket of raspberries to Dad. He went ahead of us up the bluff and cleared the bushes so that we could gather the precious fruit.\r\n\r\nDepending on the year, we also pick blueberries. They were tiny and never ripe enough, according to Mom, to make a juicy upside-down pudding.\r\n\r\nAs for the hairy, prickly currants, we avoided them ever since Aunt Magella had started making poultices out them to place on the youngest\u2019s belly to stop her from wetting the bed.\r\n\r\nSome summers, after haying, grandfather Frederic took us hazelnut picking. We\u2019d collect the prickly balls that grew in threes on the hazel branches in an old jute potato bag. The nuts had to dry in the barn for a few months before Grandpa removed them from their husks by banging the bag against the barn\u2019s stone wall.\r\n\r\nThe blonde hazelnuts were kept in Grandma\u2019s old tin canisters as a treat for being good, and even then she would only give us a few at a time on Sundays.\r\n\r\nThe berries, lard-flavoured grilled fish, sweet pudding and all the food from that time was never tasty enough to be considered a delicacy. Eating, as Mom would say, was more of a \u201ctechnical\u201d necessity to keep the body upright, the cheeks rosy and the nails hard. We knew that making meals took its toll on her. You could tell by the spiritless way she skinned a rabbit or plucked a partridge while making me recite my lessons.\r\n\r\nOur diet consisted of round potatoes, carrots, turnips, cod, smelts, small brook trout, beef in sauce, pork chops, blood sausage and roasted baloney.\u00a0At the end of August, a few boiled vegetables appeared on the table with pieces of salted bacon and corn from Grampa\u2019s field.\r\n\r\nOnce a spring, in good years, Dad would bring home live lobsters with their claws restrained by big blue rubber bands. Plunged into boiling water, the animals came out as red as fire. Dad put them on a big plate in the middle of the table, and we\u2019d watch as he split the bodies of the crustaceans in two using a hammer and the big kitchen knife. He first detached the tail section and announced to us whether it was male or female. Then with a soup spoon, he dug into the belly of each lobster and took out the liver that mom loved eating.\r\n\r\nThe youngest would burst out with a big \u201cewwww\u201d\u00a0when she saw Mom spreading the gooey green liver over a piece of toast. The kitchen was festive, with mom laughing as she watched us eat like ogres. There was melted butter splashed everywhere, but no one cared. Dad seemed so happy then.\r\n\r\nThe memory of this happy table of empty shells will always be with me. And every spring I think about it; I hear my brother arguing for the biggest claw, Mom gently asking Dad to de-shell her lobster half and the little one yelling for more bread to dip in butter. We ended the meal by joyfully sucking on the small legs from the underbellies of the lobsters to extract every last bit of flesh that still remained.\r\n\r\nThis perfect moment of happiness erased so much sadness.\r\n\r\nSince then, I have always locked away my sorrows on the page with my pen. Perhaps I should make a big fire with all those words and then WRITE about lobsters, about the faces of happy people, about garlic butter which I love so much.
