Parce que j’ai une grande gueule et que je suis une personne très loquace, les journalistes aiment beaucoup m’interviewer. C’était vrai jadis et ce l’est encore aujourd’hui même si j’ai beaucoup moins de choses importantes à déclarer. Mais revenons à l’époque de nos débuts en franchisage; à l’époque de ma grande transformation de cuisinière de boui-boui en titre pompeux de PRÉSIDENTE FONDATRICE!<\/p>\n
— Comment vous sentez-vous, chère madame Cora, lorsque vous voyez votre propre nom inscrit sur la trentaine d’enseignes de restaurants Cora? me demande la gentille intervieweuse de l’émission Capital Actions en 1998.<\/p>\n
J’ai eu envie de lui répondre que je ressentais chaque fois le même éloignement que le jour où j’ai lu pour la première fois, sur un document officiel, l’imposant titre de « Présidente Fondatrice » imprimé sous la ligne en bas de mon nom. Je me sentais éloignée; comme déjà ratatinée et assise sur une haute chaise, devant un vieux conseil d’administration, et à mille lieues de mon chaudron de crème pâtissière.<\/p>\n
« Un détachement qui fait partie intégrante du progrès », me chuchote un bel ange dans l’oreille. Je réponds plutôt :<\/p>\n
— Eh bien, mademoiselle Chalifoux, on ne peut malheureusement pas être partout à la fois; on ne peut pas tout faire soi-même. La Cora de l’enseigne n’est plus une vraie personne tournant des crêpes dans une cuisine de resto. Elle est devenue une idée, un concept; je dirais même un repère dans la brume matinale pour ventres affamés.<\/p>\n
J’ajoute aussi à quel point je suis fière du cheminement de cette petite graine d’idée que la Providence a jadis ensemencée dans ma tête. Je savoure maintenant l’expérience d’avoir engendré cette autre sorte de phénomène, différent de l’enfant, mais qui lui ressemble comme deux gouttes d’eau.<\/p>\n
Être en affaires, c’est aussi douloureux et exaltant que la maternité. C’est une espèce d’interminable accouchement en public impliquant nos tripes, toutes nos forces et la même détermination dont fait preuve la maman insistant pour que son rejeton avance bien-portant en ce monde.<\/p>\n
— Mais bien sûr, chère mademoiselle Chalifoux, plus l’entreprise grossit, plus j’ai tendance à me sentir dépassée. Heureusement que je suis entourée de collaborateurs expérimentés à qui je délègue allègrement. Jour après jour, je comprends que je ne suis plus obligée de détenir toutes les compétences; surtout depuis que j’ai lu la biographie d’Henry Ford pour m’encourager.<\/p>\n
En fin de compte, c’est le titre prestigieux qui a raison; mon rôle est de présider l’entreprise, d’incarner ses valeurs, de la représenter et de la décrire aux autres; de voir à ce qu’elle ne manque de rien et de l’enrichir le plus souvent possible de mes merveilleuses idées.<\/p>\n
— C’est bien dit, chère madame Cora<\/p>\n
— Je ne joue plus de la spatule ni de la grosse fourchette, mademoiselle Chalifoux, mais tel un bon chef d’orchestre, je dirige la symphonie. Je lance ici et là quelques coups de baguette magique et je me réserve le dernier salut.<\/p>\n
Il me fut relativement facile d’abandonner mon arsenal de cuisinière. Et relativement facile d’assumer la décision finale parce que j’ai toujours eu un gros OUI prêt à débouler de ma bouche. Oui pour le prochain emplacement, oui pour ce bon candidat et oui pour engager encore plus de monde au siège social. J’ai été très fière d’être celle qui portait dans son cœur le précieux levain des déjeuners Cora. Je me fiais à mon intuition et j’attendais toujours avant d’agir qu’elle m’envoie un quelconque signe d’approbation. D’intuition, j’ai toujours su que cette petite voix intérieure était la puce intelligente de l’ordinateur située entre nos deux oreilles et que, lorsqu’on l’écoutait, elle devenait la grâce d'état de l’entrepreneur.<\/p>\n
— Mais oui, mademoiselle Chalifoux, décider comporte toujours le risque de se tromper. Décider me demandait autant d’audace que d’humilité. Je devais avoir le courage de trancher en temps et lieu et la sagesse de quémander l’information nécessaire à l’évaluation des conséquences de nos choix.<\/p>\n
Finalement, j’ai adoré mon travail de PDG. Lorsque qu’il m’arrivait d’éprouver une quelconque difficulté à accepter ou à refuser un projet, un emplacement ou un certain candidat, j’insistais toujours « to sleep on it » comme disent les Américains. J’attendais qu’une évidence s’éveille en moi ou que mon ange gardien m’envoie une information capitale.<\/p>\n
Entre temps, j’en jasais avec mes collègues, j’écoutais leurs commentaires, je dessinais des pancartes, j’écrivais un poème, je visionnais un film japonais ou je lisais un polar islandais. J’étais toujours certaine qu’une marée intérieure m’amènerait quelques judicieux conseils. Peu m’importait le temps passé à attendre, « l’important c’est de gagner »; comme le disait si bien le grand Péladeau à cette époque.<\/p>\n
— Que pensez-vous des risques, chère madame Cora?<\/p>\n
— Lorsqu’on brasse un gros chaudron, il y a de plus en plus de boucane qui s’échappe du bouillon; c’est normal.<\/p>\n
Nous, on a ouvert le premier resto avec l’argent qui nous est resté de la vente de la maison familiale lourdement hypothéquée. Presque la totalité est partie pour l’achat du vieux resto tout équipé et 2 000 $ pour nettoyer le boui-boui, acheter une première commande de nourriture, coudre quelques tabliers fleuris et installer une enseigne sur la devanture (350 $ à payer un mois après l’ouverture). Le reste du nécessaire, on l’a apporté en vidant la maison : une belle table ronde en bois de feu ma mère, quelques bonnes casseroles, des ustensiles, des linges de cuisine, des babioles décoratives, un beau vase pour y installer les fleurs qu’on aurait les moyens d’acheter un jour et, le plus important, la photo encadrée de mon père que j’avais fixée au mur de façon à ce que ses yeux puissent voir le « cash » entrer dans la vieille caisse enregistreuse venant avec le resto.<\/p>\n
— Tout ce qu’on avait à perdre, chère mademoiselle Chalifoux, c’était notre enthousiasme et notre ardeur au travail. Et ça, on ne l’a jamais perdu malgré quelques crises de larmes, des chicanes d’ados et mes extinctions de voix à trop négocier avec les fournisseurs.<\/p>\n
— Mon histoire de Présidente Fondatrice est finalement assez simple, chère mademoiselle Chalifoux. « Je me suis dessinée moi-même », comme disait Walt Disney, « avec les moyens du bord ».<\/p>\n
Comme lorsque toute petite la tante Olivette nous apprenait à faire des châteaux de cartes. Chaque fois que le vent s’acharnait à démantibuler ma petite construction, carte après carte, je rebâtissais mon château.<\/p>\n
— Lorsque j’ai ouvert le premier petit resto, je voulais juste survivre, nous sortir de la misère et réussir à nourrir mes enfants. J’ai écouté mon cœur et j’ai décidé de faire plaisir au monde.<\/p>\n
J’ai agi, pas par intérêt ni téléguidée par une quelconque stratégie, mais bien parce que j’avais moi-même tellement besoin d’amour et de satisfaction personnelle.<\/p>\n

I felt distant, as if I had already shrivelled up and was sitting on a tall, old board of directors chair whose legs would be planted a thousand miles away from my custard pot.<\/p>\n\n\n\n - “This distance is an integral part of progress” whispered a beautiful angel in my ear. Instead I replied:<\/p>\n\n - “Well, Miss Chalifoux, you can’t be everywhere all at once unfortunately. You can’t do everything yourself. The Cora of the sign is no longer a real person flipping pancakes in a restaurant kitchen. She has become an idea, a concept. Like a beacon in the morning fog for hungry bellies.”<\/p>\n\n And I’d add how proud I am of where this little kernel of an idea, planted in my head by Providence, has taken us. I can now savour the experience of having engendered these other entities, not identical to the original child, but resembling it like two drops of water.<\/p>\n\n\n\n Being in business is as painful and exhilarating as motherhood. It’s a kind of endless public birthing that takes all your heart and soul, all your strength and the same maternal determination to ensure one’s offspring grow up strong and healthy. <\/p>\n\n\n\n - “But of course, Ms. Chalifoux, the bigger the company gets, the more I tend to feel overwhelmed. Fortunately, I am surrounded by experienced collaborators to whom I am free to delegate. With each day, I realize that I don't have to have all the skills anymore, especially since reading Henry Ford’s instructive biography for support. In the end, it’s the top title that is right: my role is to preside over the Company, to embody its values, to represent it, to explain it to others; to ensure that it lacks nothing and to enrich it as often as possible with wonderful ideas.”<\/p>\n\n\n\n - “Well said, Mme Cora.”<\/p>\n\n - “I no longer handle the spatula or big fork, Ms. Chalifoux, but, like a good conductor, I lead the symphony. I tap the magic wand a few times here and there, and the finale salute is still mine.” <\/p>\n\n\n\n It was fairly easy for me to give up my arsenal of kitchen supplies. And fairly easy to make the final decision, since I was always ready with a big YES. Yes to the next location, yes to this job candidate and yes to hiring even more people at the Head Office. I was very proud to carry the embryonic germ for Cora Breakfast and Lunch in my heart. I trusted my intuition and always waited for it to give me its blessing before acting. I always knew that this little voice inside was the smart chip of the computer sitting between the ears, and that when we listen to it, it becomes the entrepreneur’s unfailing ally.<\/p>\n\n\n\n - “But yes, Ms. Chalifoux, being wrong is a risk you run each time you make a decision. I had to be both courageous and humble. I had to have the courage to eventually make the call and the wisdom to ask for the necessary information to weigh the consequences of our choices.”<\/p>\n\n\n\n And I loved my job as President. Whenever I was unsure about accepting or rejecting a certain project, location or candidate, I always insisted on “sleeping on it” as you say in English. I’d wait for the answer to come to me or for my guardian angel to send me some key information.<\/p>\n\n\n\n In the meantime, I would chat with my colleagues, listen to their comments, draw signs, write a poem, watch a Japanese movie or read an Icelandic crime novel. I knew that an inner tide would always bring me a piece of wise advice. I didn't care how long I waited. “The important thing is to win,” as the great Péladeau said so well at the time.<\/p>\n\n\n\n - “What do you think about the risks, Mme Cora?”<\/p>\n\n - “When you’re stirring a big pot, more and more foam escapes from the stock. That’s just how it goes.” <\/p>\n\n\n\n We opened the first restaurant with the money left over from the sale of our heavily mortgaged family home. Most of it was used to purchase the old, fully equipped restaurant, with $2,000 going to clean-up, our first order of supplies, some homemade flower-themed aprons and a front sign ($350 to be paid a month after opening). The rest of the necessities we brought with us when we emptied the house: my late mother’s nice round wood table, a few good pots and pans, some utensils, kitchen linen, decorative knick-knacks, an attractive vase for later when we could afford to buy flowers and, most importantly, the framed picture of my father that I put on the wall so that his eyes could see the “cash” going into the old cash register that came with the restaurant.<\/p>\n\n\n\n - “All we had to lose, Ms. Chalifoux, was our enthusiasm and passion for our work. And we never lost that, despite a few crying spells, teenage squabbles and losing my voice a few times due to lengthy negotiations with suppliers.” <\/p>\n\n\n\n - “My story as Founding President is quite simple, Ms. Chalifoux. I drew myself, as Walt Disney used to say, with what I had at hand.”<\/p>\n\n Just like when Aunt Olivette taught us how to build a house of cards as kids. Each time the wind blew my little building into pieces, I would rebuild my castle one card at a time.<\/p>\n\n\n\n - “When I opened the first small restaurant, I simply wanted to survive, to get us out of poverty and feed my children.
