Vous ai-je déjà parlé de l’épouvantable chaleur qu’il faisait en été dans notre tout premier petit resto et du vieux proprio grec qui n’a jamais voulu que nous installions à nos frais un climatiseur de fenêtre? Eh bien, mon cher Stéphane, votre déjeuner favori remonte à ces premiers dimanches d’enfer de juillet 1987. Comme il était d’usage à l’époque de fermer les casse-croûtes le dimanche, notre resto souffrait non seulement de chaleur excessive, mais aussi d’une tragique absence de clientèle. Nous avions tellement besoin d’argent dans la caisse que j’aurais ouvert le resto huit jours par semaine si cela avait été possible.<\/p>\n
Bref, j’avais le temps de frotter toutes les tablettes de rangement entre les commandes qui arrivaient en cuisine plus lentes que de véritables tortues. Et les jeunes serveuses en salle se tordaient les doigts en astiquant les pieds de tables et de chaises tout en maugréant contre la patronne qui devrait trouver une solution au lieu de laver ses tablettes déjà propres. <\/p>\n
Et ma grande fille d’insister pour qu’on trouve une façon de tremper le nez du chat dans notre bol de lait. <\/p>\n
Finalement, à force de se chamailler entre elles, c’est la belle Fatima qui suggéra d’utiliser la moitié du tableau sur lequel nous affichions en semaine le spécial du midi, pour y annoncer un nouveau plat à être servi à bon prix en exclusivité le dimanche.<\/p>\n
— Nous les serveuses en parlerions toute la semaine pour aguicher les gourmands et les inciter à revenir le dimanche avec leur famille, conclut ma fille avec autorité.<\/p>\n
Toutes enthousiasmées, nous devions maintenant trouver un déjeuner hors de l’ordinaire pour attiser nos clients réguliers. Et les trois midinettes de se tourner vers moi pour que sorte de ma bouche l’idée qui sauvera nos dimanches. Il faut croire qu’incessamment questionné, le génie créatif tarde à répondre. Et voilà que je tourne et retourne dans ma tête chaque plat du menu susceptible d’être transformé.<\/p>\n
— Il faut inventer quelque chose d’encore plus génial que tout ce qui est déjà dessiné sur les murs! s’exclama ma fille.<\/p>\n
— Si on mettait des crêpes et du pain doré dans la même assiette, proposa notre Évelyne.<\/p>\n
— Ouais, mais il me semble que ça manque de punch, répliqua Fatima.<\/p>\n
— Pas si on y ajoute une belle montagne de fruits frais joliment coupés et qu’on saupoudre le tout de neige (notre façon d’appeler le sucre en poudre), proposa Gigi.<\/p>\n
Il m’a suffi d’ajouter qu’on pourrait aussi offrir en extra du coulis de framboises pour que la folie s’empare du casse-croûte.<\/p>\n
Et voilà que les trois gazelles se cassent l’occiput à la recherche d’un nom digne du nouveau déjeuner.<\/p>\n
Comme nous ne te connaissions pas encore, cher Stéphane, Fatima proposa le « Seventh of July »<\/p>\n
— Pourquoi pas le « Sept de juillet » demanda Évelyne, la francophone.<\/p>\n
— Parce que notre clientèle est à moitié anglophone et parce que ça ne se dit pas aussi bien en français, rétorqua ma grande fille.<\/p>\n

Le succès du « Seventh of July » servi le dimanche suivant fut à ce point fulgurant qu’à l’unanimité nous décidâmes de placarder son illustration au mur et de le servir sept jours sur sept indéfiniment.<\/p>\n
Et tranquillement, nos clients travailleurs de semaine s’habituèrent à revenir au resto le dimanche avec leur femme et leurs enfants. Puis ce furent les amis des clients avec leur famille, les amis des amis, et ainsi de suite, ce qui nous obligea à transformer nos premiers petits restos en de véritables restaurants avec un menu pour chaque client, de délicieux cocktails de fruits, des cafés spécialisés et une nourriture toujours hors du commun.<\/p>\n
Sachez, cher Stéphane, que votre « Seventh of July » est encore aujourd’hui un des meilleurs vendeurs de sa catégorie. And the young waitresses in the dining room kept busy by cleaning table legs and chairs while grumbling about the boss, who should come up with a solution instead of washing her shelves. <\/p>\n\n\n\n My eldest daughter insisted that we find a way to dip the cat’s nose in our bowl of milk. <\/p>\n\n\n\n Squabbling amongst themselves, the beautiful Fatima finally suggested that we use half of the board for the weekday special to promote a new dish at a tempting price served exclusively on Sundays. <\/p>\n\n\n\n - “Us waitresses will promote it all week to entice food lovers to return on Sunday with their families,” concluded my daughter with a commanding voice. <\/p>\n\n\n\n We all loved the idea. Now all we had to do was come up with a great breakfast dish that would appeal to our regular customers. The three waitresses turned to me, waiting for me to reveal the idea that would save our Sundays. Try as I might, I wasn’t able to pull anything out of my hat in response to the onslaught of questions. I turned each promising dish over and over again in my mind, trying to reimagine it. <\/p>\n\n\n\n - “We have to create something even more wonderful than all the dishes drawn on the walls!” exclaimed my daughter. <\/p>\n\n - “What if we served crêpes and French toast together?” proposed Evelyne.<\/p>\n\n - “Yeah, but it’s doesn’t wow enough,” replied Fatima.<\/p>\n\n\n\n Gigi then piped up: “Well what if we added a mountain of beautifully cut fresh fruit and dust it with snow.”* <\/p>\n\n I added that we could also offer some raspberry sauce on the side. And with that, our little group was seized with excitement.<\/p>\n\n The three gazelles started to rack their brains to find the perfect name for the new dish. <\/p>\n\n Fatima came up with “Seventh of July.” If we had known you back then, dear Stephane, we would have named the dish in your honour. <\/p>\n\n - “Why not Sept de juillet<\/i>?” asked the French-speaking Evelyne. <\/p>\n\n - “Because our clientele is half anglophone and because it doesn’t sound as good in French,” explained my daughter.<\/p>\n\n\n\n What else?<\/p>\n\n\n\n The success of the Seventh of July that following Sunday was so astounding that we decided to add it to the illustrations on the restaurant’s wall and serve it seven days a week from then on. <\/p>\n\n\n\n Gradually, customers who visited us during the workweek started to come back on Sunday with the wife and kids. They were followed by their friends with their families, and then the friends and families of their friends, and so on. We had to transform our first modest diners into bona fide restaurants, with a menu for each customer, flavourful fruit cocktails, specialty coffees and the same amazing dishes. <\/p>\n\n\n\n Today, your “Seventh of July,” dear Stephane, is one of the top sellers in the category.
