Fouiller dans ma caboche, d&#xE9;terrer un souvenir quelconque, l&#x2019;habiller d&#x2019;&#xE9;toffe originale&#xA0;et vous le pr&#xE9;senter enorgueilli de parures &#xE9;clatantes. Mais j&#x2019;aime aussi&#xA0;la cuisine lorsqu&#x2019;elle&#xA0;a besoin que j&#x2019;invente un nouveau festin. J&#x2019;aime r&#xE9;fl&#xE9;chir aux meilleures denr&#xE9;es, &#xE0; l&#x2019;originalit&#xE9; d&#x2019;un plat et &#xE0; l&#x2019;importance capitale du go&#xFB;t, de la premi&#xE8;re bouch&#xE9;e jusqu&#x2019;&#xE0; la derni&#xE8;re. J&#x2019;aime par-dessus tout le sourire b&#xE9;at du client satisfait.<\/p>\n<p>Ne suis-je point b&#xE9;nie d&apos;avoir ces deux grandes passions que sont l&#x2019;&#xE9;criture et la cuisine? Toutes deux &#xE9;tant transformatrices. Toutes deux&#xA0;donnant lieu &#xE0; une m&#xE9;tamorphose. Toutes deux ayant besoin du c&#x153;ur et des mains de l&#x2019;artisan capable d&#x2019;amadouer la mati&#xE8;re premi&#xE8;re pour en faire une belle histoire ou un rare d&#xE9;lice.<\/p>\n<p>Voil&#xE0; probablement pourquoi j&#x2019;ai tellement ador&#xE9; mon m&#xE9;tier! Parce que j&#x2019;ai toujours eu cette passion d&#x2019;am&#xE9;liorer les choses, de faire mieux, d&#x2019;aller plus loin.<\/p>\n<p>Avec le recul, je r&#xE9;alise &#xE0; quel point&#xA0;j&#x2019;ai pu exasp&#xE9;rer mes collaborateurs avec mon insatiable app&#xE9;tit d&#x2019;en faire plus, tant&#xF4;t un nouveau panini pour le lunch, ou encore un sandwich inusit&#xE9; ou une nouvelle cr&#xEA;pe qui go&#xFB;terait le ciel.<\/p>\n<p>J&#x2019;aime absolument tout ce&#xA0;qui concerne la cuisine. Courir les foires alimentaires, regarder les &#xE9;missions de cuisiniers &#xE0; la t&#xE9;l&#xE9;, &#xE9;plucher des montagnes de livres de recettes et pratiquer; pratiquer continuellement jusqu&#x2019;&#xE0; ce que l&#x2019;assiette soit impeccable.<\/p>\n<p>Ces&#xA0;moments de labeur intensif me font penser &#xE0; ma m&#xE8;re. L&#x2019;immense int&#xE9;r&#xEA;t que j&#x2019;avais &#xE0; la voir vider un poulet, lui trancher le cou d&#xE9;licatement,&#xA0;nettoyer ses entrailles, badigeonner ses chairs et le coucher tendrement sur un lit de tranches d&#x2019;oignons et de branches de c&#xE9;leri, &#xAB;&#x2009;pour que &#xE7;a go&#xFB;te meilleur!&#x2009;&#xBB;, disait-elle chaque fois.<\/p>\n<p>Et plus tard, mal mari&#xE9;e, j&#x2019;ai&#xA0;quand m&#xEA;me eu le bonheur&#xA0;d&#x2019;apprendre la cuisine grecque aux mille saveurs avec d&#x2019;authentiques vieilles grand-m&#xE8;res du nord de la Gr&#xE8;ce. J&#x2019;adorais&#xA0;farcir les tomates fra&#xEE;ches du jardin, les gros poivrons et les grandes feuilles de chou.&#xA0;&#xA0;J&#x2019;avais juste &#xE0; r&#xE9;p&#xE9;ter&#xA0;la recette&#xA0;traditionnelle de ma belle-m&#xE8;re et le miracle se reproduisait chaque fois.<\/p>\n<p>Puis&#xA0;j&#x2019;appris &#xE0; rouler&#xA0;les d&#xE9;licates feuilles de vigne, &#xE0; r&#xF4;tir l&#x2019;agneau, &#xE0; brasser le tzatziki, &#xE0; cuire&#xA0;les aubergines &#xAB;&#x2009;Imam Baildi&#x2009;&#xBB;&#xA0;et &#xE0; faire le pain pita. Ensuite, le plus sublime,&#xA0;on m&#x2019;enseigna comment r&#xE9;ussir les meilleurs baklavas de tout le P&#xE9;loponn&#xE8;se (nord de la Gr&#xE8;ce). Et, pour les f&#xEA;tes, les biscuits traditionnels de P&#xE2;ques, les &#xAB;&#x2009;Loukoumades&#x2009;&#xBB; arros&#xE9;s de miel, le &#xAB;&#x2009;Halva&#x2009;&#xBB; et le tr&#xE8;s d&#xE9;licieux &#xAB;&#x2009;Galaktoboureko&#x2009;&#xBB;.<\/p>\n<p>Vous pouvez imaginer &#xE0; quel point, plus tard, ce fut un grand bonheur pour moi de r&#xE9;aliser que mon plaisir de cuisiner&#xA0;&#xE9;tait devenu mon v&#xE9;ritable m&#xE9;tier. Quelle chance&#xA0;aussi d&#x2019;avoir eu l&#x2019;intuition de me sp&#xE9;cialiser en ravissements matinaux et d&#x2019;apposer mon propre nom sur une devanture commerciale!<\/p>\n<p>Bref, revenons &#xE0; cette cr&#xEA;pe tellement bonne qu&#x2019;elle go&#xFB;te le ciel, para&#xEE;t-il? Examinons ce&#xA0;cadeau de Zeus.<\/p>\n<p>Cuisez d&#x2019;abord des deux c&#xF4;t&#xE9;s une&#xA0;grande cr&#xEA;pe d&#x2019;environ 10&#xA0;pouces de diam&#xE8;tre.<\/p>\n<p>Puis m&#xE9;langez de belles framboises fra&#xEE;ches ou d&#xE9;congel&#xE9;es&#xA0;avec de la cr&#xE8;me p&#xE2;tissi&#xE8;re, une grosse&#xA0;cuill&#xE9;r&#xE9;e de fromage &#xE0; la cr&#xE8;me et un soup&#xE7;on de miel. D&#xE9;posez le m&#xE9;lange obtenu au centre de la cr&#xEA;pe et pliez en quatre les bords de la cr&#xEA;pe comme si vous emballiez un pr&#xE9;cieux cadeau.<\/p>\n<p>Nappez le fond d&#x2019;une&#xA0;belle assiette de cr&#xE8;me anglaise et d&#xE9;posez le cadeau en mettant les bords pli&#xE9;s en dessous.<\/p>\n<p>Puis, d&#xE9;corez le tout d&#x2019;une g&#xE9;n&#xE9;reuse portion de coulis de framboises.<\/p>\n<p>Je vous jure que Zeus lui-m&#xEA;me s&#x2019;endormirait de bonheur en ayant go&#xFB;t&#xE9; ce morceau de ciel.<\/p>\n<p>Et nous avons nomm&#xE9; cette cr&#xEA;pe &#xAB;&#x2009;Lucie La Framboise&#x2009;&#xBB; parce&#xA0;que notre grande Lucie aime follement&#xA0;les framboises et qu&#x2019;elle&#xA0;partage notre&#xA0;passion des d&#xE9;jeuners depuis bient&#xF4;t 20&#xA0;ans. Rummaging in my head, digging up some memory, dressing it up in original attire and presenting it to you proud and brilliantly adorned. But I also like cooking when I need to invent a new dish that will delight. I like to think about the best ingredients, the dish&#x2019;s originality, and of the vital importance of taste, from the first mouthful to the last. Above all, I like the blissful smile of a satisfied customer. <\/p>\n\n\n\n<p>Am I not so abundantly blessed to possess these two great passions of writing and cooking? Both have transformative powers; both conjure a metamorphosis; both need heart and hands of an artisan capable of coaxing the raw materials into a beautiful story or a flavourful delight. This is probably why I found so much enjoyment in my work! Because I always had this passion to improve upon things, to do better, to reach further. Reflecting back, I realize to what point I drove my collaborators mad with my insatiable appetite for more &#x2013; for a new lunch panini, a surprising sandwich, a new cr&#xEA;pe that would taste out of this world. <\/p>\n\n\n\n<p>I love absolutely everything about cooking. Exploring food fairs, watching TV cooking shows, devouring mountains of recipe books and practising incessantly until a dish is perfect. <\/p>\n\n<p><span style=\"tab-stops:361.65pt\">&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0;&#xA0; <\/p>\n\n<p>These periods of intense work make me think of my own mother. I would watch her, fascinated, as she gutted a chicken, carefully cut off the neck, cleaned the innards, basted its flesh and laid it gently on a bed of sliced onions and celery stalks. &#x201C;So it tastes better!&#x201D; she explained each time. <\/p>\n\n\n\n<p>And later, unhappily married, I nonetheless had the great fortune to learn authentic Greek cuisine, with its myriad flavours, from grandmothers in Northern Greece. I loved to stuff fresh tomatoes from the garden, big peppers and large cabbage leaves. I simply followed my mother-in-law&#x2019;s traditional recipes and each time, without fail, a little miracle would transpire. &#xA0;&#xA0;&#xA0;<\/p>\n\n\n\n<p>I learned to roll up delicate vine leaves, roast lamb, mix together tzatziki, cook &#x201C;Imam Bayildi&#x201D; eggplant and to make pita bread. And, the most sublime of all, I learned how to make the best baklava in all of the Peloponnese (Northern Greece). And when it was time to celebrate: traditional Easter cookies, or loukoumades drizzled with honey, halva and the heavenly galaktoboureko.<\/p>\n\n\n\n<p>You can imagine my happiness, when later, my great passion for cooking became my profession. What luck too to have had the instinct to focus on morning gastronomy and to put my name on the front of a commercial establishment. <\/p>\n\n\n\n<p>All this to finally come to the title of this letter: Raspberry 4 Lucie, a cr&#xEA;pe so delicious that apparently it tastes divine. Let&#x2019;s see how this gift from Zeus is made. <\/p>\n\n<p>First cook a large cr&#xEA;pe, about 10 inches in diameter, on both sides.&#xA0; <\/p>\n\n<p>Next, mix some beautiful fresh or thawed raspberries together with the custard, a large spoonful of cream cheese and a touch of honey. <\/p>\n\n<p>Place the mixture on the centre of the cr&#xEA;pe and fold over four sides as if you were covering up the contents of a precious gift. <\/p>\n\n<p>Spread some English cream on a beautiful plate and arrange the &#x201C;package&#x201D; fold side down on the sweet bed of cream. <\/p>\n\n<p>Decorate it with a generous helping of raspberry sauce. <\/p>\n\n\n\n<p>I promise that Zeus himself would slumber contentedly after tasting this divine creation. <\/p>\n\n<p>And we called the cr&#xEA;pe Raspberry 4 Lucie, to honour our Lucie, who is crazy about raspberries and has shared our passion for breakfasts for nearly 20 years now. She was the company&#x2019;s controller for a long time before becoming its Corporate Vice-President.
