Je me souviens particuli&#xE8;rement des week-ends. De la congestion infernale des automobiles essayant de se trouver une place dans le trop petit stationnement d&#x2019;alors. &#xC9;poustoufl&#xE9;es par ce qu&#x2019;elles&#xA0;avaient entendu dire ou hypnotis&#xE9;es par certaines descriptions de plats, les familles aussit&#xF4;t sorties de l&#x2019;auto&#xA0;couraient se faufiler dans le cordon de clients encerclant le vieil &#xE9;difice o&#xF9; nous habitions le rez-de-chauss&#xE9;e. Du fond de ma cuisine,&#xA0;mes yeux devaient traverser le charivari des 29&#xA0;places assises pour atteindre la fen&#xEA;tre en baie du devant d&#x2019;o&#xF9; me venait la clameur d&#x2019;une foule avide d&#x2019;entrer.<\/p>\n<p>Pour rire, quelques fois, je chuchotais aux enfants que nous &#xE9;tions peut-&#xEA;tre comme des attractions&#xA0;de f&#xEA;te foraine dont on exhibait les quatre bras, les six doigts par main ou la chevelure jusqu&#x2019;aux pieds. Et le plus jeune se f&#xE2;chait chaque fois contre ma stupide imagination et bien entendu contre&#xA0;le fait qu&#x2019;ils n&#x2019;&#xE9;taient que&#xA0;des ados oblig&#xE9;s par leur m&#xE8;re de travailler tous les week-ends de leur vie.&#xA0;Dieu merci, ce n&#x2019;&#xE9;tait pas nous que la foule venait examiner, mais ce qu&#x2019;il y avait dans nos assiettes. Ils voulaient tous v&#xE9;rifier si ce qu&#x2019;ils avaient entendu dire &#xE9;tait vraiment aussi extraordinaire que ce qu&#x2019;on leur avait racont&#xE9;.<\/p>\n<p>Et, Dieu merci, &#xE7;a l&#x2019;&#xE9;tait. Et chaque client servi allait le dire &#xE0; son voisin, &#xE0; son amie &#xE0; son coll&#xE8;gue de bureau, qui lui-m&#xEA;me, le redisait &#xE0; ses proches. Et c&#x2019;est ainsi, comme une tra&#xEE;n&#xE9;e de poudre, que les tabl&#xE9;es de nourriture&#xA0;Cora allaient se reproduire et se r&#xE9;pandre un peu partout au Canada.&#xA0;Et Dieu merci, la force des ph&#xE9;nom&#xE8;nes de foire que nous pensions &#xEA;tre demeura avec nous. Puisque depuis plus de 33&#xA0;ans, des milliers de bras et de mains agiles s&#x2019;affairent encore &#xE0; garnir avec amour nos tabl&#xE9;es de nourriture ensoleill&#xE9;e.<\/p>\n<p>Avec le temps, et toujours confront&#xE9;s &#xE0; l&#x2019;incessant besoin de nouveaut&#xE9; pour &#xE9;blouir nos clients, nous avons form&#xE9; un petit groupe de &#xAB;&#x2009;fous de la bouffe&#x2009;&#xBB; qui se r&#xE9;unissait ponctuellement pour brasser des id&#xE9;es, tout proposer sans g&#xEA;ne aucune et aussi, ce que j&#x2019;aimais&#xA0;le plus, pour raviver des souvenirs d&#x2019;enfance faisant encore se tr&#xE9;mousser la langue.&#xA0;Et c&#x2019;est ainsi qu&#x2019;un matin, la belle grande Annie, athl&#xE9;tique et vigoureuse, d&#xE9;terra pour nous l&#x2019;histoire du fameux &#xAB;&#x2009;grilled-cheese&#x2009;&#xBB; que sa m&#xE8;re lui servait, toute petite, avec un bol de cr&#xE8;me aux tomates Campbell. C&#x2019;&#xE9;tait son repas pr&#xE9;f&#xE9;r&#xE9;, nous avoua-t-elle avec un tr&#xE9;molo dans la voix.<\/p>\n<p>J&#x2019;ai voulu en savoir plus, mais Annie se referma. On s&#x2019;est donc concentr&#xE9; sur la possibilit&#xE9; d&#x2019;un &#xAB;&#x2009;grilled-cheese&#x2009;&#xBB; capable d&#x2019;arr&#xEA;ter la pluie de tomber. Et pendant quelques semaines, nous avons pratiqu&#xE9; mille et une fa&#xE7;ons d&#x2019;anoblir le sandwich grill&#xE9; en un d&#xE9;licieux repas tout rempli de bonnes choses. Un plat &#xE0; d&#xE9;guster en toute qui&#xE9;tude, accompagn&#xE9; de fruits frais joliment coup&#xE9;s ou de pommes de terre r&#xF4;ties sur la plaque. Un plat qui, reproduit &#xE0; la maison, pourrait quadrupler l&#x2019;&#xE9;merveillement des v&#xF4;tres autour de la table.&#xA0;&#xC0; moi, fillette nourrie cinq jours sur sept de morue bouillie, r&#xF4;tie dans la po&#xEA;le, en croquettes, sal&#xE9;e ou napp&#xE9;e de sauce blanche, le &#xAB;&#x2009;grilled-cheese&#x2009;&#xBB; d&#x2019;Annie m&#x2019;avait tir&#xE9; les larmes du c&#x153;ur. Et j&#x2019;eus tendance &#xE0; pr&#xE9;f&#xE9;rer celui qu&#x2019;on nommerait &#xAB;&#x2009;sandwich CROQUE THON&#x2009;&#xBB; lorsque l&#x2019;&#xE9;quipe me pr&#xE9;senta leurs meilleurs essais.<\/p>\n<p>Imaginez un sandwich au pain brun,&#xA0;croustillant gaiement sur une plaque chauffante ou dans une po&#xEA;le. Imaginez son ventre tout bien rempli d&#x2019;une g&#xE9;n&#xE9;reuse portion de thon en conserve habilement m&#xE9;lang&#xE9; avec des &#xE9;chalotes &#xE9;minc&#xE9;es et juste un peu de mayonnaise. Imaginez, deux belles tranches de fromage jaune, chacune coll&#xE9;e au pain et emp&#xEA;chant le poisson de glisser hors de sa cachette.&#xA0;Imaginez la premi&#xE8;re bouch&#xE9;e lib&#xE9;rant une explosion de saveurs et la chair de thon entrem&#xEA;l&#xE9;e de fromage chaud et go&#xFB;teux d&#xE9;goulinant sur vos doigts. Ressentez l&#x2019;excitation de vos papilles, le bruissement de votre m&#xE9;moire se rappelant l&#x2019;irr&#xE9;sistible attrait du fruit d&#xE9;fendu.<\/p>\n<p>Bien s&#xFB;r, &#xE0; la maison vous choisirez votre pain et l&#x2019;ADN de votre fromage. Et bien s&#xFB;r que vos marmots raffoleront du simple sandwich au fromage grill&#xE9;. Surtout avec une bonne cr&#xE8;me de l&#xE9;gumes ou m&#xEA;me une&#xA0;soupe&#xA0;poulet et riz en conserve.&#xA0;Mais il est certain qu&#x2019;avec un brin de cr&#xE9;ativit&#xE9;, une source de chaleur et quelques pinc&#xE9;es d&#x2019;amour vous pourrez transformer ces deux aliments de base que sont le pain et le fromage en un v&#xE9;ritable chef-d&#x2019;&#x153;uvre culinaire.<\/p>\n<p>Vous avez eu le temps de r&#xE9;fl&#xE9;chir ces derniers mois. Vous connaissez par c&#x153;ur le contenu de votre frigo. Vous avez essay&#xE9; beaucoup de nouvelles recettes. Si vous ne l&#x2019;&#xE9;tiez point, vous &#xEA;tes tout probablement devenu des fous de la bouffe. Vous &#xEA;tes donc capable de transformer l&#x2019;ordinaire&#xA0;&#xAB;&#x2009;grilled-cheese&#x2009;&#xBB; en un repas &#xE9;blouissant pour les v&#xF4;tres. Et le potentiel de garnitures est infini. &#xAB;&#x2009;Tant&#xF4;t familier et r&#xE9;confortant, tant&#xF4;t d&#xE9;licat et raffin&#xE9;, le &#x201C;grilled-cheese&#x201D; est un sandwich aux multiples facettes qui est toujours irr&#xE9;sistible, quelle que soit son incarnation.&#x2009;&#xBB;<\/p>\n<p>&#xA0;&#xA0;&#xA0;&#xA0; <span style=\"font-family:&quot;Apple Color Emoji&quot;\">&#x2764;&#xFE0F;<\/p>\n<p>&#xA0;&#xA0; Cora<\/p>\n<p>Psst : Moi, j&#x2019;ajoute un peu de c&#xE9;leri finement hach&#xE9; &#xE0; la garniture parce que &#xE7;a donne du &#xAB;&#x2009;crunch crunch&#x2009;&#xBB; &#xE0; la texture. Et aussi parce que je raffole du c&#xE9;leri. J&#x2019;en mets partout et j&#x2019;en grignote le soir en regardant la t&#xE9;l&#xE9; au lieu de manger des chips ou du chocolat (vieux r&#xE9;flexe d&#x2019;ancienne grassouillette).&#xA0;Et aussi parce que mon nouveau passe-temps de confinement m&#x2019;a appris &#xE0; donner une seconde vie aux pieds de c&#xE9;leri en repiquant le c&#x153;ur dans la terre.<\/p>\n<p>Un magnifique &#xE9;t&#xE9; &#xE0; vous tous.<\/p>","protected":false},"excerpt":{"rendered":"<p>Moi j&#x2019;ajoute un peu de c&#xE9;leri! The weekends were especially memorable: The infernal congestion of cars looking for a spot in the tiny parking lot. Families, amazed by what they had heard or mesmerized by descriptions of certain dishes, ran to join the lineup of customers that encircled the building where we occupied the first floor. At the back of the kitchen, my eyes skimmed over the hubbub of the 29-seat space to the bay window at the front, where I could hear the excited clamour of the crowd waiting to enter. <\/p>\n\n\n\n<p>For a laugh, I would whisper to the kids that we were like some creatures on show at an amusement park with six fingers on each hand and hair down to our feet. My youngest would always get annoyed at my dumb imagination, and of course, because they were the only teens whose mom made them work every weekend of their lives. Thank goodness, the crowd wasn&#x2019;t there to gawk at us, but rather to marvel at what was on their plates. They came to see for themselves if what they had heard measured up to the rumours. <\/p>\n\n\n\n<p>And, thank goodness again, it did. And each customer we served told their neighbour, friend and co-worker, who in turn told their friends and acquaintances. And that&#x2019;s how, like wildfire, Cora dining tables multiplied and expanded throughout Canada. Thank goodness, too, the powerful draw of our amusement park show remained with us. For over 33 years, thousands of agile arms and hands have worked to adorn our bright, sunny dining tables with love. <\/p>\n\n\n\n<p>As time passed, the need to offer new items to delight our customers became an ongoing challenge, so we set up a small group of people who were &#x201C;nuts about food.&#x201D; We would get together once in a while to whip up some ideas. Nothing was off the table, and what I especially liked was that these new dishes had to rekindle some childhood memory that still shimmied its way across our tongues. &#xA0;&#xA0;<\/p>\n\n\n\n<p>One morning, the beautiful, tall Annie, athletic and lively, arrived to tell us about the story of the famous grilled cheese her mom used to make her when she was little, accompanied by a bowl of Campbell&#x2019;s tomato cream soup. It was her favourite meal, she declared, her voice trembling slightly. <\/p>\n\n\n\n<p>I wanted to know more, but Annie stopped there. We focused on the idea of a grilled cheese that would be so delicious, it would make the rain disappear. For the next few weeks, we tested ways to glorify this grilled sandwich and turn it into an amazing meal full of good things. A dish to enjoy simply, accompanied by attractively cut fruit or potatoes crisped on the griddle. A dish that, made at home, would quadruple the astonishment of those seated around the table. <\/p>\n\n\n\n<p>Annie&#x2019;s grilled cheese made my heart tear up. I, who as a young girl, ate codfish five days a week, served up in different ways &#x2013; boiled, pan-roasted, as nuggets, salted or topped with white sauce.<\/p>\n\n<p>Among the best attempts the team presented, I leaned towards the version that we would eventually christen the TUNA MELT. <\/p>\n\n\n\n<p>Imagine two layers of brown bread slices happily crisping away on a hot griddle or in a pan. Imagine the sandwich&#x2019;s belly stuffed with a generous helping of canned tuna mixed perfectly with sliced green onions and a little mayonnaise. Imagine two beautiful slices of cheddar, each one hugging the bread and preventing the fish from slipping from its hideaway.<\/p>\n\n\n\n<p>Imagine the first mouthful releasing an explosion of flavours. The tuna&#x2019;s flesh mixing with the hot, tasty cheese, running from your fingers. Feel the thrill to your taste buds, the rustling of your memory as it recalls the irresistible draw of forbidden fruit. <\/p>\n\n\n\n<p>Of course, you can choose the type of bread as well as the DNA of your cheese. And of course, your little ones will gobble down this simple grilled cheese sandwich &#x2013; especially if served with a delicious canned vegetable cream soup or even some chicken and rice. With a little creativity, a heat source and a sprinkling of love, you will most certainly transform these two staples, bread and cheese, into a true culinary masterpiece. <\/p>\n\n\n\n<p>You&#x2019;ve had lots of time to think these past few months. You know the contents of your fridge by heart. You&#x2019;ve tried tons of new recipes. If you were not already, you have probably become nuts about food. You&#x2019;ll be able to transform this plain grilled cheese into a dazzling meal for your family. The possible garnishes are infinite. &#x201C;Once familiar and comforting, delicate and refined, the grilled cheese is a sandwich with multiple facets that is always irresistible, whatever form it takes.&#x201D; <\/p>\n\n\n\n<p>&#xA0;&#xA0;&#xA0;&#xA0; <span  style=\"font-family:&quot;Apple Color Emoji&quot;\">&#x2764;&#xFE0F;<\/p>\n\n<p>&#xA0;&#xA0; Cora<\/p>\n\n<p>Psst: I add a little finely chopped celery to the garnish because it adds a pleasing crunch-crunch to the texture in the mouth. And also, because I&#x2019;m crazy about celery.
